Pay:

$80,000 $90,000 per year + bonus (5% of store-level EBITDA)

About Mai


Mai is the French-Japanese Fusion concept of Notoro Group, a multi-concept Japanese restaurant company in Boston. Mai is a lively, bar-forward Japanese dining room in the Seaport where great hospitality, craft food, and a strong beverage program come together. We're looking for an experienced, hands-on Restaurant Manager to lead the building.


What you'll do

  • Lead the full four-wall operation of Mai: guest experience, team, bar program, sales, and the store-level P&L
  • Build and manage front- and back-of-house schedules that flex to demand and seasonality
  • Recruit, screen, hire, train, and coach servers, hosts, and the broader team
  • Drive sales and manage to the four-wall numbers; own disciplined P&L management
  • Run weekly payroll: tip allocation, hours verification, and submission to accounting
  • Handle cash and biweekly bank deposits
  • Manage inventory with just-in-time ordering to control cost and reduce waste
  • Build community and local business relationships; implement marketing and protect the Mai brand
  • Own regulatory and compliance obligations: health inspections, permitting, licensing, and local requirements
  • Manage conflict and handle business emergencies calmly and decisively
  • Be the culture driver set the tone, standards, and energy of the restaurant
  • Step into front- or back-of-house roles ad hoc when the business needs it
  • Attend mandatory weekly manager and marketing meetings
  • Manage dynamic scheduling
  • Work with HR policy to ensure compliance

What we're looking for

  • Experienced restaurant manager with a track record running a full-service restaurant and its P&L
  • Knowledge of sushi and Japanese cuisine, including etiquette and proper food handling
  • Experience working with a bar program and bar team
  • Proven experience training, hiring, and screening servers and hosts
  • Comfortable with restaurant POS systems (Square, Toast, or Clover)
  • Experience coaching teams and managing to KPIs and P&L targets
  • Available to work 5 days per week across lunch and dinner service, including weekends
  • Nice to have: experience opening or running an izakaya, sushi or bar-forward concept; familiarity with Boston/Seaport permitting and licensing

Compensation & perks

  • $80,000 $90,000 base salary
  • Annual bonus of 5% of store-level EBITDA
