    Executive Chef – Fine Dining & Seafood-Centric Location: Waco, TX

    Compensation: $95,000 Base Salary + Quarterly Bonus Potential

    About the Role: We are seeking a visionary Executive Chef to lead the culinary operations of our fine-dining, seafood-focused restaurant in Waco, Texas. This position demands a culinary leader with high-level artistic vision, superior fish fabrication skills, and strong business acumen. You will have full creative control over seasonal menus, lead a dedicated back-of-house team, and drive operational excellence while fostering a collaborative and growth-oriented kitchen culture.

    Key Responsibilities

    • Culinary Leadership & Innovation: Design and execute high-concept, seasonal seafood menus; oversee daily prep and service to ensure precision, taste, and presentation.

    • Seafood & Fish Butchery Expertise: Demonstrate mastery in local and global seafood sourcing, whole fish fabrication, yield management, and specialized seafood cooking techniques.

    • Financial Management: Direct responsibility for kitchen P&L, managing food and labor costs, inventory controls, vendor negotiations, and budget targets without compromising quality.

    • Team Development & Culture: Recruit, mentor, and inspire BOH staff; maintain high standards of sanitation, safety, and professional kitchen behavior.

    • Operations & Purchasing: Oversee inventory, product ordering, food safety compliance, and kitchen maintenance protocols.

    Qualifications

    • 3+ years of experience as an Executive Chef or Chef de Cuisine in a high-volume, fine-dining establishment.

    • Proven expertise in whole-fish butchery, seafood preparation, and raw bar management.

    • Strong track record of P&L oversight, menu engineering, and cost control.

    • Proven leadership capability with a dedication to fostering a positive, growth-oriented work environment.

    • Culinary degree or equivalent professional training preferred.
