Job Details

Major Food Group is hiring an experienced Sous Chef for THE GRILL located in The Seagram Building.

THE GRILL is a historically based American chophouse set in midcentury New York. It takes great inspiration from history; both the time the Seagram Building was built and the restaurants that existed at that time. It is the precursor to the NY Steakhouse, when things were still intricate and elegant. It celebrates all the animals of the land and some of our favorites from the sea.

This fine-dining concept is hiring an experienced Sous Chef with a strong work ethic to help set and maintain the highest standards of cuisine and professionalism.

RESPONSIBILITIES:

  • Sourcing, ordering and receiving the highest quality ingredients. rn
  • Developing, teaching, and maintaining all recipes and techniques. rn
  • Organizing a large team and holding each chef accountable for their responsibilities. rn
  • Overseeing and maintaining a smooth professional service. rn
  • Maintaining all kitchen equipment and following up for any repairs needed. rn
  • Maintaining high standards of cleanliness and organization. rn
  • Overseeing scheduling and inventory to work within a set budget. rn

REQUIREMENT:

  • 3+ years progressive experience in BOH operations, fine dining or Michelin Rated restaurant experience is preferred rn
  • Strong knowledge of and competency performing BOH administrative duties, excellent organization skills and attention to details rn
  • Excellent communication skills, self-motivated and demonstrates the ability to make quick and sound decisions rn
  • Proven ability in training and mentoring staff to continuously develop their skills and knowledge while providing leadership and direction rn

It is the precursor to the NY Steakhouse, when things were still intricate and elegant. It celebrates all the animals of the land and some of our favorites from the sea. There is extensive table side preparation and service. There is also extensive use of THE GRILL. It is the name of the restaurant, the style of restaurant, and the piece of equipment we use in the kitchen for many of our signature preparations.
