Caroline's Oyster Bar delivers a refined coastal dining experience anchored by a high-performing oyster bar program, fresh seafood execution, and precise culinary craftsmanship. As part of the JW Marriott culinary team, you will work in a polished, upscale kitchen where productivity, consistency, and adherence to culinary standards drive every shift.

We are hiring a Senior Line Cook who can meet the demands of a fast-paced, high-volume luxury hotel kitchen and maintain the level of output required to support one of Charlotte's most notable dining destinations.

What You'll Do

  • Oversee daily food preparation and production, ensuring all tasks are completed accurately, efficiently, and in alignment with JW Marriott culinary standards
  • Direct and support entry-level cooks and apprentices, ensuring they follow established preparation methods and maintain required pace and accuracy
  • Follow all White Lodging F&B procedures, health department regulations, and federal food safety guidelines, maintaining strict compliance across every shift
  • Ensure proper food handling, storage, and sanitation procedures are executed consistently according to HACCP and JW Marriott requirements
  • Support food and labor cost targets by maintaining portion accuracy, minimizing waste, and executing production tasks efficiently
  • Verify ingredient freshness and recipe adherence, ensuring all dishes meet established specifications and oyster bar standards
  • Monitor guest feedback indicators and adjust production practices to maintain consistency, quality, and presentation expectations
  • Maintain a professional, disciplined work environment, reinforcing teamwork and productivity throughout the kitchen
  • Perform additional assigned duties that support the operational flow of the culinary team

What You'll Bring

  • Strong working knowledge of commercial kitchen equipment and high-volume production methods
  • Demonstrated proficiency in sautéing, broiling, frying, roasting, butchery, garde manger, and pantry; seafood and oyster bar experience strongly preferred
  • Experience supervising or mentoring junior kitchen staff, with the ability to maintain pace and output expectations
  • Culinary degree, formal training, or apprenticeship preferred but not required
  • Ability to sustain fast, efficient movement for extended periods in a demanding upscale hotel kitchen environment
