Job Title: Nightlife Food & Beverage Manager (VIP & Operations)
Position Type: Full-Time (Nights, Weekends, and Holidays Required)
Position Overview
We are seeking an energetic, detail-oriented Nightlife F&B Manager to oversee high-volume evening operations, drive revenue, and elevate guest experiences. In this role, you will lead front-of-house staff, manage floor operations during peak hours, lead VIP and bottle service execution, and maintain strict service standards in a fast-paced nightlife environment.
Qualifications & Requirements
Experience: 3+ years of F&B management experience in a high-volume nightclub, lounge, rooftop, or premium nightlife venue with a focus on VIP/bottle service.
VIP Expertise: Proven track record of managing high-end table operations, handling client relations under pressure, and upsell management.
Certifications: Active Food Handler and Alcohol Service Certifications (e.g., ServSafe, TIPS) required.
Technical: Proficiency with POS systems (e.g., Toast, Aloha), reservation platforms (e.g., SevenRooms), and inventory software.
Availability: Ability to work a late-night schedule, including late evenings, weekends, and holidays.
Key Responsibilities
VIP & Bottle Service Leadership: Direct table reservation floor plans, manage host/hostess flow, oversee table spend Minimums, ensure proper bottle presentation protocols, and build strong relationships with high-value guests and promoters.
Operational Leadership: Oversee daily F&B nightlife operations, ensuring fast bar execution, seamless service, and flawless floor presence during peak hours.
Team Management: Recruit, train, schedule, and supervise bartenders, VIP servers, barbacks, and hosts; lead pre-shift line-ups focusing on service standards and guest recognition.
Inventory & Cost Control: Monitor high-end spirit/champagne inventories, manage yield, perform regular audits, and prevent loss or unrecorded comps.
Compliance & Safety: Enforce local health codes, responsible alcohol service (e.g., TIPS/ServSafe certification), strict ID verification, and venue security protocols.
Daily Financial Reporting: Oversee nightly sales reconciliations, register closeouts, table tab audits, tip distributions, and labor cost management.
