Onboarding and training is estimated to begin mid-to-late October 2026. Because our permanent location is wrapping up construction, the initial onboarding and training may be adjusted. We will provide the exact address and finalized dates at least two weeks before training begins.

The Role

Executes a station on the line to the Executive Chef's standard — the craftsperson who turns the menu into plates, service after service. A role built on consistency and quality at volume, pairing French technique with Japanese precision across an elite Wagyu and seafood program.

What You’ll Do

  • Set up, run, and break down an assigned station; own mise en place and station readiness.
  • Cook to recipe, plating, and timing standards on every ticket, every service.
  • Hold food-safety, rotation, and cleanliness standards on the line.
  • Communicate on the pass; fire and coordinate courses with the brigade.
  • Support prep and par levels and minimize waste.

What You Bring

  • 1+ year line experience in quality-driven or high-volume kitchens; fine dining a plus.
  • Sound knife skills and fundamentals; comfort with premium proteins and seafood a plus.
  • Stamina for a fast, exacting line.

Certifications & Requirements

  • Illinois Food Handler — REQUIRED. ANAB-accredited food-handler certificate within 30 days of hire; renew every 3 years. (Waived for holders of a current CFPM.)

Compensation — Pay Scale

$20.00–$24.00 per hour · eligible for BOH tip-pool share. Good-faith figure; the final offer is confirmed in writing.
