    Job Summary

    The Pastry Chef oversees the daily operations of the pastry department. This role requires a balance of high-volume efficiency for events and intricate artistry for à la carte desserts, all while maintaining the strict quality standards expected by club membership.

    Key Responsibilities

    • Menu Development: Design and execute seasonal, innovative dessert menus, artisanal breads, and signature pastry items for all club outlets.
    • Operational Oversight: Manage daily production schedules for à la carte dining, pastry carts, locker room amenities, and banquet event orders (BEOs).
    • Quality amp; Consistency: Ensure every item meets the club's standards for taste, portioning, and "wow" visual presentation.
    • Leadership amp; Training: Help mentor, and train pastry staff in advanced techniques, safety protocols, and standardized recipes.
    • Member Engagement: Occasionally interact with members to customize desserts for special occasions or gather feedback on menu features.
    • Compliance: Maintain pristine sanitation levels in accordance with local health department regulations and ServSafe standards.

    Required Skills amp; Qualifications

    • Technical Mastery: Expertise in classic and contemporary pastry, including chocolate work and laminated doughs.
    • Adaptability: Ability to adjust recipes for dietary restrictions (e.g., gluten-free, vegan) and manage fluctuating workloads between seasons.
    • Experience: Typically requires 3+ years of pastry experience in a club, resort, or luxury hotel.
    • Certifications: A degree in Baking and Pastry Arts or ACF certification (e.g., CEPC) is highly preferred.
    • Physical Stamina: Capacity to stand for long periods and lift up to 50 pounds.
