Purpose of the Position

Under the direction of the Kitchen Manager, directs all activities with accountability for the back of the house operation to include but not limited to: Ordering food and equipment, scheduling, training, assigning jobs, food preparation to include actually cooking food, and reviewing work performances of all production staff employees.

Knowledge, Skills, and Abilities Related to Position

  • Ability to read and write.
  • Basic math skills.
  • Knowledge of all types of cooking methods by reading and converting recipes.
  • Knowledge of all kitchen equipment.
  • Good organizational skills, ability to complete multiple tasks concurrently.
  • Ability to communicate in writing or verbally to both supervisors and subordinates.
  • Strong supervisory skills and high-volume production experience.
  • Position will be exposed to temperature extremes and dangerous equipment, tools, and machinery.
  • Position will be exposed to slippery footing and congested work areas.

Education, Experience, Licensure, Certification Required

Education:

  • High school diploma or equivalent education/experience that equates to a high school diploma

Experience:

  • Supervisory experience

Additional Consideration(s)

Education:

  • Certified in ServSafe or an equivalent food handler program
  • A degree in Culinary Arts, food service management, hospitality, or equivalent field

Experience:

  • Experience with food service management to include directing an entire staff of cooks, prep cooks, and salad and dessert production
  • High-volume food production experience
  • Experience working in a university or college setting

Salary Information Salary $42,560 to $53,200 Commensurate with Education and Experience CNU Information
