    Processing Technician I

    SUMMARY

    Under the direction of the Processing Supervisor, processes all raw and smoked products.

    ESSENTIAL DUTIES AND RESPONSIBILITIES

    • Completes all start-up and shut-down procedures for all processing areas.
    • Grinds, blends, and final grinds all raw materials to be used in processing.
    • Loads and unloads, cooks and records weights for smokehouse.
    • Completes required forms and properly applies thermometers and probes.
    • Understands the procedures for hanging smoked meats.
    • Assembles Weiler grinder and mixer/blender on a daily basis for processing.
    • Weighs all materials according to each product specific formulation with no underweights and +1 pound max overweight and documents on each product specific batch card.
    • Weighs spices and water and documents on batch cards according to each ground batch
    • Understands the mixing and grinding procedure to prepare the product for stuffing.
    • Observes product appearance and changes plate or knives accordingly.
    • Understands smokehouse operations which include start-up, weights and loading of wood, placing of thermometer probes, checking each cycle and documentation.
    • Adheres to all HACCP requirements for all CCP's and correctly completing all required forms.
    • Washes, scrubs and sanitizes machines and all areas according to sanitation schedule.
    • Observes safety and security standards.

    QUALIFICATIONS

    Education and/or Experience

    One to two years' of food manufacturing experience preferred

    Food Handler Certification required...Southside can assist you in obtaining this

    Language Skills

    Ability to understand English for all job-related circumstances.

    Mathematical Skills

    Ability to add, subtract, using whole numbers.

    Reasoning Ability

    Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists.

    Physical Demands

    While performing the duties of this job, he/she is frequently required to stand; walk; use hands to finger, handle, or feel; and talk or hear. He/she is regularly required to reach with hands and arms. He/she must occasionally lift and/or move up to 50 pounds. Exposed to heat and cold temperatures throughout the work day.

    Work Environment

    The noise level in the work environment is usually moderate to loud.
