Prep Cook is in charge of ensuring the restaurant has food prepped for service at all times. Utilizing tools provided (Spec recipes, cutting practices, safety practices, date machine, etc.) to properly prepare for all culinary needs. Always using the prep sheet to ensure we are not over prepping or under prepping for any given shift. Always practicing F.I.F.O. (First In, First Out) at all times.
RESPONSIBILITIES -Prepping sauces -Preparing proteins (bulk bacon, brisket, short rib, etc.) -Keeping kitchen and areas of the kitchen (walk ins) clean and organized at all times -Assisting the dishwashers when business dictates -Cutting and slicing many menu items for service -Ensuring dates of product are always within range of expiration -Properly labeling all prepared goods for reference -Portioning prepared goods -Maintaining high quality standards for all produced prep items
