The Opportunity:  

The Department of Health Sciences in the College of Health Professions and Sciences (CHPS) at the University of Central Florida (UCF) invites applications for a 9-month, non-tenure earning, instructor or lecturer position. The position is open to master’s and doctoral level Registered Dietitian Nutritionists who hold valid credentials through the commission on Dietetic Registration (CDR). The preferred start date is as early as January 2027, but no later than August 2027. 

 

We are seeking a dynamic and collaborative faculty member to support undergraduate education and the development, implementation and ongoing operation of a newly approved Master of Science in Nutrition Science and Dietetics, with the goal of achieving ACEND candidacy as a Nutrition and Dietetics Coordinated Program (CP).

The successful candidate will be expected to: 

  • Teach undergraduate and/or graduate courses in nutrition and related areas using evidence based, student centered instructional approaches.

  • Develop graduate courses with content specific to program needs using evidence-based, student-centered teaching approaches.

  • Supervise and evaluate students during supervised experiential learning (SEL) across diverse practice settings.

  • Foster and maintain partnerships with healthcare systems, community organizations, food and nutrition service providers, preceptors and other stakeholders to support high-quality experiential learning opportunities.

  • Contribute to student recruitment and mentoring.

  • Pursue ongoing professional development to maintain currency in nutrition and dietetics practice, education, and competency-based learning models.

  • Contribute to a collaborative, student focused academic environment.

  • Engage in scholarly activities, service, and professional development.

    Minimum Qualifications: 

    • Master’s degree (for an instructor) or doctorate, Ph.D. or equivalent (for a lecturer) in human nutrition/dietetics or a closely related discipline from an accredited academic institution at the time of application.  

    • Credentialed as a Registered Dietitian Nutritionist (RDN) by the Commission on Dietetic Registration (CDR). 

    • Minimum 4 years full-time professional practice post-CDR credentialing with experience providing patient care in hospital, rehabilitation, or long-term care facilities or managing food service operations. 

    Preferred Qualifications: 

    • Experience applying advanced clinical nutrition skills as a member of an interdisciplinary team caring for medically complex patients in a hospital, rehabilitation, or long-term care facility or directing food service operations in these facilities. 

    • Teaching, preferably in an academic setting or mentoring students in professional practice.  

    • Excellent communication, organizational, and interpersonal skills. 

    • Demonstrated ability to work collaboratively with diverse stakeholders.
