    Job Description:

    JOB SUMMARY:

    Under the direction of the Property President, the Executive Director of Food & Beverage provides senior property-level leadership for all Food & Beverage operations. This role translates approved enterprise and property objectives into operating plans, directs execution across outlets, and is accountable for financial performance, guest experience, food quality, service, safety, and regulatory compliance. The Executive Director exercises broad delegated authority within approved budgets, staffing models, policies, and strategic parameters, while presenting material investments, concept changes, organizational changes, and exceptions for executive approval.

    ESSENTIAL DUTIES & RESPONSIBILITES:

    • Develops property-level Food & Beverage operating plans, policies, programs, and performance objectives aligned with approved enterprise and property strategies.
    • Directs day-to-day and long-range execution across all Food & Beverage outlets, including service standards, production, beverage operations, sanitation, inventory, purchasing, and cost controls.
    • Owns Food & Beverage profit and loss performance and establishes corrective action plans to achieve approved revenue, labor, food cost, beverage cost, expense, and profitability objectives.
    • Develops and administers annual operating budgets. Prepares capital plans, business cases, and resource recommendations for review and approval through established governance processes.
    • Conducts and reviews financial, operational, market, and management analyses. Makes decisions within delegated authority and escalates material risks, exceptions, or investments requiring executive approval.
    • Establishes and monitors standards for food and beverage quality, consistency, presentation, portioning, service, procurement, and guest satisfaction.
    • Leads approved operational enhancements, outlet improvements, menu strategies, technology initiatives, and capital projects that support property objectives.
    • Determines the Food & Beverage operating structure within approved staffing, financial, and organizational parameters. Recommends material organizational design changes for approval.
    • Selects, leads, and develops the Food & Beverage leadership team. Oversees hiring, training, coaching, performance management, succession planning, and talent development in accordance with Company policy.
    • Develops leadership bench strength and maintains succession plans for critical roles, including active support of the Tribal Career Development program and mentorship of Seminole Tribe members.
    • Ensures appropriate staffing, supplies, equipment, and operating resources are available to deliver consistent service while meeting approved financial targets.
    • Partners with Marketing, Finance, Human Resources, Procurement, Security, Facilities, and other functions to execute events, promotions, concepts, and property initiatives.
    • Provides the Property President and property leadership with regular reporting regarding business performance, forecasts, risks, corrective actions, capital needs, and strategic recommendations.
    • Serves as a key member of the Property Operations Leadership Team and contributes Food & Beverage expertise to broader property priorities and decisions.
    • Maintains awareness of industry trends, emerging technologies, guest preferences, and competitive practices through research, professional education, and industry networks.
    • Maintains confidentiality of privileged and proprietary information.

    LEADERSHIP AUTHORITY AND ACCOUNTABILITY:

    • Exercises significant delegated authority for property Food & Beverage operations within approved budgets, policies, staffing models, and strategic direction.
    • Approves routine operating decisions, corrective actions, outlet-level resource allocations, and expenditures within assigned authority.
    • Recommends major capital commitments, significant concept changes, material exceptions to approved plans, and organizational changes outside approved parameters.
    • Is accountable for property-wide Food & Beverage execution and results but does not independently establish enterprise-wide strategy or approve matters reserved for the Property President or other executive governance.

    REGULATORY, SAFETY, AND CULTURE RESPONSIBILITIES:

    • Conducts all responsibilities in accordance with Gaming Commission regulations and Seminole Tribe of Florida and departmental policies and procedures.
    • Demonstrates a commitment to responsible gaming and responsible alcohol service and promptly notifies appropriate management of concerns or observations.
    • Ensures compliance with applicable food safety, sanitation, alcohol service, workplace safety, and other legal and regulatory requirements.
    • Demonstrates behaviors that reinforce Company values, including communication, integrity, fun, respect, accountability, passion, and dedication.
    • Promptly and discreetly reports observed illegal acts or internal ethics violations to management and/or the Ethics Hotline.

    EDUCATION AND EXPERIENCE:

    • Bachelor's degree in Hospitality Management, Business Administration, Culinary Arts, or a related field and at least eight (8) years of progressively responsible Food & Beverage experience, including leadership of complex, multi-outlet operations. Equivalent relevant experience may be considered in accordance with Company practice.
    • Demonstrated responsibility for significant operating budgets, profit and loss performance, labor management, cost controls, and capital planning.
    • Demonstrated experience leading leaders, building succession plans, and driving consistent operating standards across multiple venues or business units.

    PHYSICAL DEMANDS:

    While performing the duties of this job, the Team Member is frequently required to stand, walk, use hands to handle or feel, reach with hands and arms, talk, hear, taste, or smell. The Team Member must frequently lift and/or move up to 20 pounds. Specific vision abilities include close, distance, color, and peripheral vision, depth perception, and the ability to adjust focus. The role may require standing for several hours and bending or lifting in operational areas.

    WORK ENVIRONMENT:

    Duties are performed in professional office, kitchen, dining, bar, receiving, storage, and casino floor environments. The Team Member may be exposed to casino-related environmental factors, including secondhand smoke, excessive noise, temperature changes, food production equipment, and other conditions associated with Food & Beverage operations.

    EMPLOYMENT PROCESS:

    Candidates must obtain gaming licensure by successfully completing required background screening through Seminole Gaming Compliance and Regulations before beginning employment. Screening may include a credit check, criminal background check, and drug screen.

    EMPLOYMENT PREFERENCE:

    The Tribal Council gives preference in its employment practices to Native Americans. First preference is given to members of the Seminole Tribe who meet the job requirements. Second preference is given to members of other federally recognized Native American Tribes who meet the job requirements.
