The Role

Owns the dessert and pastry program — the elegant final note of a vintage-Hollywood meal. This role brings innovation and quality to a program that must balance decadence with the menu's refined, health-forward lighter side.

What You’ll Do

  • Develop and execute the dessert, pastry, and bread programs to the EC's standard.
  • Own pastry mise, production, and par; manage station and team.
  • Create signature finishes that fit the Old-Hollywood identity and the menu's range.
  • Manage pastry cost, sourcing, and waste; uphold food safety.

What You Bring

  • 4+ years pastry experience in fine dining; lead/pastry-chef experience preferred.
  • Strong plated-dessert and viennoiserie/bread fundamentals.
  • Cost and production-systems experience; food-safety certification.

Certifications & Requirements

  • Certified Food Protection Manager (CFPM) — REQUIRED. Current ANSI-CFP–accredited CFPM (valid 5 years); this role serves as an on-duty CFPM. At least one CFPM must be present during all hours of food preparation and service.
  • Allergen Awareness (manager) — REQUIRED with CFPM. Illinois-approved, ANSI-accredited allergen training within 30 days; renew every 3 years; kept on site.
  • Food Handler is satisfied by the CFPM.

Compensation — Pay Scale

$75,000 to $102,000 per year, paid as an annual salary (market-aligned). The final offer is confirmed in writing. This position is eligible for a performance bonus as a component of total compensation.
