    Job Description: Dietary Manager- Sycamore Care Strategies

    Location: Loogootee, IN, 47553

    POSITION SUMMARY The Dietary Manager will organize and supervise the Food Service Department in all aspects of providing food service. Develop and maintain department operations manual, plan regular and therapeutic diet menus, maintain budget and food cost control. Assist with assurance of safety and sanitation standards. Maintain necessary records. Assess resident food acceptance and needs both individual and general. Participate in committee meetings, confer with dietary consultant and implement recommendations and promote favorable public relations. Perform related tasks as required.

    ESSENTIAL DUTIES AND RESPONSIBILITIES The essential functions include, but are not limited to the following: • Develop staffing patterns and weekly time schedules. Provide for adequate staffing to meet governing agencies requirements and the needs of the facility. • Interview and select food service personnel and complete required employment records. • Conduct food service personnel orientation programs for documentation. • Assign various food service and handling responsibilities ensuring adherence to effective and efficient practices. Observe work being performed to evaluate efficiency and effectiveness of the operation and quality of food served. • Provide instruction and directions as needed on a daily basis. • Develop and implement staff in-service education programs and maintain in-service records. • Counsel employees and implement disciplinary action when indicated. • Perform employee evaluations and make wage recommendations. • Maintain own professional requirements for continuing education and staff development by participating in work related seminars, etc. • Conduct Annual review of policies and procedures. • Department Operations Manual - Develop, revise, and maintain as necessary for each level of personnel. • Test, standardize, and supervise the use of recipes, including portion control. • Plan menu cycles with consultation from a registered dietician, if not so qualified. • Calculate specific therapeutic diets as ordered by the physician, and supervise preparation. • Provide nutritional supplements and snacks as required to meet individual nutritional needs. • Assist in preparation and administration of the annual operating budget for Food Service. • Prepare and review monthly cost analysis reports. • Inventory and purchase food and departmental supplies in quantity, quality and variety needed in accordance with facility budget and standards. • Inspect purchases received. • Monitor usage of supplies. • Plan ahead for replacement of major equipment items. • Make periodic environmental rounds of the food service department, dining rooms, and nourishment rooms to ensure compliance with safety and sanitation regulations and standards. • Report all incidents which occur in the dietary department to the Facility Administrator and Director of Nurses as related to residents, and complete required forms. • Plans and assists in preparation of special meals for parties, banquets, etc. • Periodically visits patients to evaluate food service, develop a Food and Nutritional History Data Sheet, explain diet requirements, determine likes and dislikes, to promote better food service. • Interviews sales personnel and purchases food and supplies as required. • Participates in department head meetings, and consultations with the Facility Administrator. • Evaluates Work Performance Records of Dietary Employees. • Coordinates dietary service with nursing service in cooperation with nursing personnel. • Sees that food is obtained and ready for meal preparation by cooks. • Checks diet trays before they leave the kitchen area for accuracy. • Develops a file of tested standardized recipes. • Submits required reports to Facility Administrator as necessary. • Checks diets against physician orders to ensure accuracy of diet records and physician orders. • Inspects dietary department regularly to ensure that department is safe and sanitary. • Follows established rules and regulations of the facility and the dietary department. • Plans and participates in in-service education programs for dietary department and other related health personnel. • Assist in cleaning procedures of Dietary Department. • Maintains personnel records of dietary employees. • Inspects storage areas and food pantry for cleanliness and order on a weekly basis. • Other duties as may be directed by the Facility Administrator.

    MINIMUM QUALIFICATIONS (KNOWLEDGE, SKILLS, AND ABILITIES) Must be a qualified dietician, or a graduate from a state approved course that provided 90 course hours of classroom instruction in food service supervision who has a minimum of one (1) year experience in some aspect of institutional food service management, or enrolled as a current student in a state approved dietary manager’s course, or a graduate of a dietetic technician program approved by the American Dietetic Association (ADA) or a graduate of a ADA approved dietetic assistant course that includes the fundamentals of food service management, and nutrition, or a graduate of an accredited collegiate program with a degree in foods or nutrition or food administration with a minimum of one (1) year experience in food service management, or training and experience in food service supervision and management in military service consistent with programs cited above.
