Our chef, Trang Lu, is a native of Vietnam. She was born in the Mekong Delta, grew up, and worked in Saigon. Her job in Saigon provided extensive opportunities to travel across various provinces and cities in her native country, allowing her to experience a wide variety of regional dishes.
Trang and her husband, Mike, later ran businesses that gave them opportunities to travel across the United States and around the world. Together, they searched for Vietnamese restaurants in hopes of finding authentic dishes similar to the ones Trang yearned for from back home. Trang missed her mother’s cooking and homemade recipes—flavors she could never find anywhere else in Tennessee or throughout their travels.
