Summary:

Presbyterian is seeking a qualified Cook for the Kaseman Hospital location! This position is responsible for preparing and producing hot and cold food items for all areas of the department. Duties include food preparation for Cold Prep, Grab & Go, bulk production, short-order grill, and retail operations. Prepares food items according to established menu cycles, recipes, and production needs. May serve as the department's charge person and provide direction to staff as needed.

Responsibilities:

• Prepare hot food items for the next day as indicated by menu cycle.
• Fruit and vegetable preparation, food portioning, and other bulk food preparation.
• Prepare Grab and Go and other retail items.
• Routine cleaning and sanitation of all areas.
• Assist with serving food items as indicated by established workflow.
• Utilize flat-top grill, convection oven, tilt skillet, steamers, and stand mixer.
• Must be able to follow recipes for cooking and baking.
• Prepare food using various cooking methods, including pan frying, sautéing, boiling, grilling, baking/roasting, simmering, steaming, braising, stewing, blanching, and poaching.
• Perform cooking, plating, and completion of dishes in view of and while interacting with customers.
• Demonstrate proficiency in diet orders and knowledge of where to find the information.
• Follow food service safety practices and procedures, including temperature control.
• Prepare meals based on dietary needs and special requests.
• Read recipes, calculate conversions, and forecast volumes.
• Assist in the training of staff.
• Deliver trays to patients.
• Demonstrate competency in knife skills.
• Register sales on assigned cash register and provide visitors with courteous, friendly, and efficient checkout service.
• Act as person in charge when coordinator is not on site.
• Perform other duties, including putting away orders, dishwashing, sweeping, mopping, and taking out trash.

Qualifications:

High School/GED preferred.

Five to ten years experience in high volume preparation and cooking in a hotel, restaurant, cafeteria, catering firm, government, or private institution.

Or internal candidate that demonstrates competency in all shifts in the kitchen and as a shift charge person.
