General Manager Las PerlasLas Perlas - General Manager - Los Angeles, CA Do you know your Espadín from your Tobalá? Las Perlas is a Oaxacan-style cantina at Sixth and Main in downtown LA, a living tribute to Mexico's native spirit. Since 2010 we've built one of the largest agave spirits collections in the country, with 450+ bottles, plus a craft cocktail program, Mexican and local beers, tacos on the patio, and a Mezcal Society that brings producers, brand partners, and agave aficionados through our doors all year. We're looking for a General Manager who loves agave spirits and wants to run the room where LA drinks mezcal.
Who we areLas Perlas is part of Pouring With Heart, a hospitality group operating 24+ bars across California, Colorado, and Texas. Our purpose: For Each Other. We exist to raise the human spirit through community, camaraderie, and connection, for our guests and for our teams.
What you'll own (not limited to)The agave program. Curate the back bar. Build relationships with importers, distillers, and brand reps. Keep our list the best in the city and teach the team to sell it with pride.
The room. The energy of the floor, the pace of service, the regulars who feel at home and the first-timers who become regulars.
The team. Hire, train, schedule, and develop bartenders, barbacks, security, and floor staff. Build a crew that stays.
The business. Full P&L ownership: labor, COGS, inventory, ordering, cash handling, and monthly reporting. You'll partner with our ops and finance teams and run this bar like it's yours.
The community. Mezcal Society events, tastings, brand partnerships, and a real presence in the DTLA neighborhood.
Who you are3+ years leading a high-volume bar (GM or strong AGM ready to step up). Bars, not restaurants.
Real agave knowledge. You can talk producers, regions, and production methods. No certifications required. We'll know it when we hear it.
You've hired, trained, and kept hourly crews in a late-night environment.
Comfortable with the numbers: P&L, labor targets, inventory/pour cost, scheduling systems, POS.
Current or willing to obtain: RBS certification, LA County Food Handler card and other state required certificates.
Available nights, weekends, and holidays. We pour until 2AM. Oversee all aspects of bar operations including scheduling, payroll, inventory, maintenance, and compliance.
Work closely with your AGM and BLT to develop leadership skills, delegate effectively, and build team alignment.
Collaborate on cocktail menus, programming, and creative activations that reflect your bar's brand and community.
Lead regular meetings and performance reviews to ensure clear communication and accountability.
Represent Pouring With Heart with professionalism, authenticity, and pride in every interaction.
Physical RequirementsMust be able to work on your feet for extended periods (up to 8 hours)
Ability to lift and move up to 50 pounds
Fast-paced movements and mobility required to cover bar and floor space efficiently
Ability to bend, reach, and perform repetitive motions as part of daily bar operations
