We're hiring full-time Start-Up Enrober Operator Trainees for our Durango, Colorado facility. This is an on-the-job training role built for someone who wants to grow into a skilled Operator position. You'll train alongside experienced Operators and the Start-Up team to learn how to set up, start, and support enrobing equipment, melters, and tempering units so production is ready to run on time.

Success in this role depends on attention to detail, following instructions closely, and the ability to think critically and troubleshoot. You don't need to be an expert in chocolate on day one but you do need to be genuinely interested in learning chocolate tempering and crystallization, and in applying that learning on the floor. We invest time in training, so we're looking for people who value teamwork, take pride in quality, and want to stay and grow.

SCHEDULE

Full-Time: Monday-Thursday, 4:00am-2:30pm with required overtime as needed on Fridays and Saturdays.

WHAT YOU'LL LEARN & DO

  • Learn the methodology and purpose of each part of enrobing operation (setup, flow, coating quality, line rhythm, cleanup).
  • Learn to set and monitor temperature, pressure, and timing controls; start conveyors, machines, and pumps.
  • Support melted chocolate levels and assist with maintaining proper chocolate temper under guidance of the Enrober Operator.
  • Observe gauges, dials, and product characteristics; report and help adjust controls to support consistent temper and coating quality.
  • Collect and examine product samples during production to confirm quality, color, content, consistency, and viscosity.
  • Clean, wash, and sanitize equipment and work areas using approved procedures and solutions.
  • Stop or reset machines when malfunctions occur, clear jams, perform minor maintenance/repairs, and report issues promptly.
  • Help reduce bloomers and scrap by following process controls and handling product carefully.
  • Follow all safety rules, GMPs, and food-safety requirements; contribute to a clean and safe work environment.
  • Support other production needs such as feeding product, hand finishing, packaging, and labeling as assigned.

Requirements

  • Strong attention to detail and ability to carefully follow written and/or verbal instructions.
  • Ability to think critically, troubleshoot, and ask the right questions when something looks off.
  • Ability to visually inspect product and supplies to meet quality standards.
  • Good hand-eye coordination and ability to work safely around moving conveyors and equipment.
  • General mechanical aptitude and comfort learning basic machine adjustments and minor fixes.
  • Problem-solver mindset and proactive approach to preventing downtime and quality issues.
  • Genuine interest in learning about chocolate - especially crystallization, tempering, and how process affects finished quality.
  • Regular, consistent attendance and punctuality (essential). Training is an investment, and we're looking for people who want to grow and stay with the team.
  • Ability to communicate clearly and respectfully with a team and maintain a steady attitude during busy or stressful moments.

Rocky Mountain Chocolate Factory Inc

Rocky Mountain Chocolate Factory is an international franchisor, confectionery manufacturer and retail operator in the United States, Canada, Philippines, Japan, South Korea, and the United Arab Emirates. The Company is based in the charming historical town of Durango located on the western slope of the Rocky Mountains in southwestern Colorado. From its 53,000 square foot factory, the Company manufactures an extensive line of premium chocolate candies and other confectionery products to supply its many franchise locations, delivered fresh by its fleet of refrigerated trucks.

The factory typically produces approximately 300 chocolate candies and other confectionery products, using proprietary recipes developed primarily by its master candy maker. These products include many varieties of clusters, caramels, creams, meltaways, truffles and molded chocolates. Individual stores prepare a variety of caramel and candy apples, fudge, chocolate items and confections in full view of the customer using traditional cooking utensils such as copper kettles on gas-fired stoves and marble slab cooling tables.

In 1985 the Company went public and is now traded on the NASDAQ exchange under the symbol "RMCF".
