ABOUT FOX PIZZA

Fox Pizza is a sourdough pizza and natural wine bar opening in Novato this summer. We make everything by hand naturally leavened dough, house-made sauces, scratch ingredients and we keep the menu focused and intentional. The room will be small, the team will be small, and the food will be good.

We are not a corporate operation. We are two people building something they care about, and we want to hire people who feel the same way about the work. We will be open 4-8pm, Wednesday - Sunday.

LINE COOK

This is a make-line cook position. You will be responsible for executing service from the line building pizzas, managing the make station, coordinating with the owner on expo, and helping the kitchen run clean and fast during service hours.

But we are hiring with the future in mind. The owner currently manages the dough program and day-to-day BOH operations. As you get comfortable with how we work and earn trust, the plan is to hand you more responsibility the dough program, then kitchen scheduling, then overall BOH management. The title and pay grow with the role.

WHAT YOU WILL DO

Service Shifts (Wed Sun)

  • Set up and break down the make line
  • Execute pizza builds accurately and at pace
  • Manage ticket flow and communicate with expo
  • Keep the make station clean and organized throughout service
  • Track and report any prep shortages before service
  • Help close and clean the kitchen at end of night

AM Prep (occasional, as volume grows)

  • Mise en place for make line components
  • Portioning and prep of toppings and sauces
  • Label and organize cooler per food safety standards
  • Learn the dough program over time (goal: take over from owner)
  • Gradually take on kitchen scheduling and ordering responsibilities

WHAT WE ARE LOOKING FOR

Required

  • 2+ years kitchen experience, ideally on a cook line
  • Comfortable working a fast, high-focus service
  • Strong attention to consistency and quality
  • Reliable service nights are not negotiable coverage
  • Marin County Food Handler Card (or willingness to obtain)

Valued

  • Interest in sourdough, fermentation, or craft ingredients
  • Pizza or flatbread experience
  • Wants to grow into a leadership role
  • Communicates well with a small team
  • Comfortable working alongside the owner day-to-day

PREP COOK

You are the person who makes service possible. While the owner runs the dough program each morning, you are doing everything else: breaking down and portioning proteins, producing sauces and condiments, prepping vegetables and toppings, restocking make lines, and making sure the kitchen is organized and ready by the time the service team arrives.

This is AM production work. It requires someone who is self-directed, consistent, and takes pride in detail. You will not be supervised minute-to-minute we expect you to manage your station, work through your prep list, and finish clean.

WHAT YOU WILL DO

Daily Batch Prep

  • Sauce production (pizza sauce, finishing oils, condiments)
  • Cheese prep and portioning
  • Vegetable and topping prep to spec
  • Portion and label all items with date and weight
  • Rotate product FIFO and keep cooler organized
  • Maintain daily prep log

Station & Kitchen

  • Set up make line stations before service team arrives
  • Stock refrigerated inserts to par
  • Clean prep surfaces, equipment, and mise en place area
  • Note any shortages or items to reorder
  • Follow all food safety and temperature logging protocols
  • Available for occasional service shifts as volume grows

WHAT WE ARE LOOKING FOR

Required

  • 1+ year in a professional kitchen (prep, line, or production)
  • Strong knife skills and knife safety
  • Experience with scratch production cooking (not just reheating)
  • Consistent, organized, clean-as-you-go
  • Able to work AM shifts independently without constant direction
  • Marin County Food Handler Card (or willing to obtain within 30 days)

Valued

  • Interest in quality ingredients and craft food
  • Experience working alongside a dough or fermentation program
  • Availability for occasional Friday or Saturday service
  • Comfortable in small team environments
  • Proactive doesn't wait to be told what needs doing

SCHEDULE DETAIL

Tuesday: 7:00am 1:00pm (batch prep alongside owner dough mix)

Wednesday Saturday: 7:00am 2:00pm (full batch prep + make line setup)

Sunday: 7:00am 1:00pm (batch prep for Sunday service)

The kitchen is quiet in the mornings. You will be working alongside the owner (who manages the dough) but largely owning your own prep list. On busy nights, there may be opportunities to pick up service shifts and get experience on the line.

DISHWASHER

What You'll Do

  • Keep a continuous flow of clean dishes, sheet pans, screens, and utensils throughout service
  • Run the dish machine efficiently and keep the dish area clean and organized
  • Support the kitchen with basic prep tasks, restocking, and running product as directed
  • Mop floors and break down the kitchen at close
  • Show up on time, every time, ready to work

  • California Food Handler Card required before start date (we can help with this)
