The Pastry Kitchen Supervisor is responsible for the preparation, inventory, and maintenance of all outlets and banquet events. Essential Duties and Responsibilities: Responsible for knowledge of menu, use of approved recipes to prepare menu items and proper plate presentation. Mise en place (preparation and organization of assigned stations). This entails set up and thorough cleaning at the end of shift. Knowledge of proper storage and handling of food. Knowledge of and adherence to health codes. Follow all relevant food health and safety guidelines including proper dating and labeling of food. Establishing and maintaining par levels and prep lists, and itemized production lists. Assist Pastry Chef with inventory as needed. Attend meetings as needed if Pastry Chef is unable to and communicate the outcome of said meetings effectively. Must be able to multi-task and plan effectively. Support and contribute to the mission and overall success of the resort by accomplishing performance objectives focused on preparation of food. Support Cooks with opening and closing side work and service if needed. Ensure Ranch Mission is executed. Follow safety precautions and procedures. Able to execute tastings. Helping the Pastry Chef with ordering and assisting in maintaining inventory by tracking, labeling, and replacing key ingredients. Maintain a workstation that is both clean and sanitary. Communicate with the Pastry Chef about any kitchen supplies and upgrades that are needed. Positive attitude and ability to thrive in a fast-paced kitchen. Assist with training cooks as needed. Ensure cooks are producing and executing products as directed and said product meets quality standards set by Pastry Chef. Willingness to continue learning and improving your craft. Other duties as assigned by Pastry Chef and helping in other culinary outlets if needed. Knowledge of events and ranch wide areas of the property. Minimum Requirements: Culinary Arts diploma or foreign equivalent + 24 months experience in a professional pastry/baking kitchen environment. Special Skills: Knowledge of traditional and modern pastry techniques, conversion tables, and proper cooking techniques. Knowledge of how to run all kitchen equipment and their upkeep. Strong communication skills. Exceptional attention to detail and organizational skills. Availability to work evening and weekend shifts.
