Mini Kabob is seeking a highly organized, fast-paced, hands-on kitchen leader to help oversee kitchen flow, prep execution, service pacing, organization, and daily operations during high-volume service.


We are a family-owned Armenian restaurant established in 1987, known for open-fire grilled meats, scratch-made recipes, and operating at an extremely high level inside a small, fast-moving kitchen environment.


This is a highly hands-on leadership role. We are looking for someone who leads from the front, moves with urgency, stays calm under pressure, thinks logically, solves problems quickly, and is willing to jump into any position necessary to support the team during service.


The ideal candidate thrives in fast-paced kitchens, takes ownership naturally, communicates clearly under pressure, and understands how to maintain organization and flow during busy rush periods.


Ideal for candidates with experience in high-volume kitchens, line leadership, expo, grill, or fast-paced restaurant operations.

Responsibilities


  • Help oversee daily kitchen operations and service flow
  • Support kitchen organization, cleanliness, and efficiency throughout service
  • Coordinate prep execution, line readiness, and station organization
  • Help manage ticket pacing and communication during rush periods
  • Identify bottlenecks and solve operational issues quickly
  • Support food quality, consistency, and plating standards
  • Jump into any station as needed during busy service periods
  • Assist grill, prep, expo, packaging, dishes, and catering support when necessary
  • Maintain organization and urgency throughout the kitchen
  • Support inventory organization and product rotation
  • Ensure stations remain stocked and service-ready
  • Help train and support kitchen team members
  • Assist with catering prep and large-order coordination
  • Support opening and closing procedures
  • Maintain cleanliness, sanitation, and operational standards
  • Help create a calm, focused, team-oriented kitchen environment
Qualifications


  • Prior kitchen leadership, lead line cook, or high-volume restaurant experience preferred
  • Strong sense of urgency and ability to multitask under pressure
  • Comfortable working in a physically demanding, fast-paced kitchen environment
  • Highly organized and detail-oriented
  • Strong communication and problem-solving skills
  • Ability to lead by example and support the team wherever needed
  • Calm under pressure with strong operational awareness
  • Reliable, punctual, and consistent
  • Ability to move quickly while maintaining standards and organization
  • Experience in high-volume, systems-driven restaurant environments such as Din Tai Fung, Hillstone/Houston’s, or similar operations is highly valued

Position Details


  • Full-time position
  • Base pay at $16.90/hr with guaranteed hourly pay $26–30/hr with tip makeup, depending on experience and role responsibilities
