About Ma s New York Italian-American Deli & Pizzeria
Ma s is a new, family-owned New York Italian-American deli and pizzeria bringing authentic flavors and old-school hospitality to North Carolina. Rooted in generations-old family recipes from New York, we specialize in overstuffed heroes, homemade meatballs, classic red-sauce dishes, thin-crust and grandma-style pizzas, fresh pasta, quality deli meats and cheeses, and all the comforting staples that define Italian-American neighborhoods.
We re building this from the ground up as a true family business and are looking for a passionate General Manager to join early. You ll help shape the kitchen build-out, equipment selection, workflow, menu execution, and team culture to create a welcoming spot where food and family come first.
Key Responsibilities
Pre-Opening & Build-Out: Collaborate closely with ownership on kitchen design, equipment, layout, and setup for efficient deli and pizzeria operations.
Food Quality & Operations: Oversee BOH and FOH with a strong emphasis on authentic New York Italian-American standards, scratch cooking, consistency, food safety, and cost control.
Team Leadership: Recruit, train, schedule, and lead a dedicated team while fostering a supportive, family-like culture where everyone takes pride in the food and service.
Guest Experience: Deliver warm, efficient hospitality so every guest feels like part of the family.
Financial Management: Handle P&L, inventory, vendor relationships (including quality Italian products), food/labor costs, and profitability.
Compliance & Administration: Maintain all health, safety, and regulatory standards.
Growth: Contribute to menu development, specials, and community engagement to make Ma s a beloved local gathering place.
What We re Looking For
3+ years of restaurant General Manager (or strong AGM) experience, ideally in Italian-American, deli, pizzeria, or red-sauce concepts.
Genuine passion for New York Italian-American food and a track record of maintaining high food quality and consistency.
Experience with new restaurant openings or kitchen/operations setup is a big plus.
Strong leadership skills with the ability to build and nurture a positive, family-oriented team.
Knowledge of food safety (ServSafe preferred), inventory systems, and cost management.
Flexible availability, including evenings and weekends during our launch phase.
Bonus: Background in independent/family-owned restaurants or a personal connection to Italian-American cuisine.
What We Offer
Competitive base salary ($70,000 $85,000+) based on experience, plus performance bonuses tied to sales, food costs, and guest satisfaction.
