JOB PURPOSE: This position is responsible to manage the foodservice program for the Cumberland County Jail according to policies and procedures, and federal/state requirements. Provides substantial, attractive, well-balanced, and nutritious meals for the inmates by preparing and supervising the preparation of meals; procures and receives supplies and equipment following established procedures; performs all other related or similar duties as required. The position is a full-time position, with a full benefits package. Pay is $34.74 per hour.

KEY EXPECTED RESULTS:
  1. Ensures proper meals for inmates by preparing and supervising the preparation of the three meals daily, including special diet meals.
  2. Meets all sanitary standards by maintaining a clean and orderly kitchen and ensures compliance in all phases of food preparation.
  3. Maintains fresh foodstuffs by providing proper storage, putting away stock in proper storage, rotating stock in proper storage, rotating stock in store room and in the freezer to ensure "first in, first out" use of stock.
  4. Maintains foodstuffs by checking stock to determine inventory level, anticipating needed foodstuffs and supplies, placing and expediting orders and verifying receipt of supplies and food supplies.
  5. Purchases foodstuffs and supplies by identifying and qualifying suppliers, negotiating prices, estimating food supplies needed and placing and expediting food orders.
  6. Ensures a flexible rotating menu by allowing for an increase or decrease in jail population and maintain recipes for every item on the menu.
  7. Ensures proper security by supervising the inmates engaged in food preparation being trained, serving, and cleaning.
  8. Provides business manager cost per meal by keeping a running total as to the amount of meals served.
  9. Maintains emergency inventory by stocking enough supplies to feed population for two weeks.
  10. Attempts to improve the food service operation by recommending to the support services director all improvements desired and makes recommendations as to purchases other than foodstuffs.
  11. Ensures security by maintaining an accounting for all knives, meat forks, and related items at all times, using established accounting procedures.
  12. Maintains a safe, clean working environment by operating the kitchen in accordance with established policy including American Correctional Association and Maine jail standards, policy, and procedure manuals, certification standards, and departmental SOP's and directives.
  13. Assists in the success of Sheriff events, training sessions, and meetings by assisting in the preparation and serving of meals and snacks, assisting in the clean-up after meals and snacks and provides availability of meals to all personnel.
  14. Ensures documentation of any problems by writing incident reports on incidents occurring in the kitchen.
  15. Maintains kitchen staff job results by coaching, counseling, and disciplining staff, planning, monitoring and appraising job results.
  16. Maintains professional and technical knowledge by attending educational workshops, establishing personal networks and participating in professional societies.
  17. Contributes to team effort by accomplishing related results as needed.
  18. Supports the Sheriff 's safety and health policies by attending required safety training programs, reporting all accidents and suspected safety hazards to Supervisor.
  19. Fulfills job function by participating as an active member in training, participating on Sheriff task forces and performing other responsibilities as assigned.
QUALIFICATIONS:
  • High school diploma or equivalent.
  • Must be able to lift, carry or move 50 pounds.
  • At least 2 years secondary education in Culinary Arts and at least 5 years in institutional meal planning and preparation required.
  • Thorough knowledge of sanitary food preparation, large institutional kitchen operations, care and sanitation of kitchen equipment required.
  • Excellent supervisory skills with previous supervisory experience preferred.
  • SERV Safe Certification desired.
