Position Overview:

This position is responsible for overseeing all food purchasing and production for the Garden of the Gods Resort and Club. This includes the creative development of engaging menus for our dining outlets as well as Kissing Camels Club, Recreation Center, Pools, In-Room Dining, and Banquets. Also, this role fulfills a leadership role in creating and executing special events throughout the year.

The Executive Chef oversees the following:

  • Supervising all culinary team members, developing and monitoring food and labor cost, and maintaining the highest professional food quality and sanitation procedures.
  • Supervising the Purchasing Manager and Stewarding Manager

Essential Duties and Responsibilities include:

  • Work together with VP of F&B on long-term strategies of culinary program to increase revenue opportunities.
  • Design and develop menus for all outlets that are creative, seasonal, and in line with each distinct culinary purpose.
  • Create and implement menu recipe & plating guidelines including dietary and allergy denotations.
  • Oversee and ensure consistency of product and service is at a high standard
  • Oversee that all food safety standards are in place and met
  • Change menus as directed by senior staff.
  • Ensure only positive guest reviews for the quality of food in all F & B areas
  • Achieve budgeted food and labor costs.
  • Ensure proper culinary methods and techniques through continuous training and feedback.
  • Keep all food and service levels at a high standard.
  • Scheduling of employees
  • Directly responsible for management of all purchasing.
  • Menu cost control.
  • Direct and lead and coach direct reports and ensure their effectiveness in the operation.
  • Oversee and maintain cleanliness of the kitchen and equipment.
  • Complete regular walk-throughs with overnight cleaners and engineering consistently.
  • Attend all weekly meetings.

Required Licenses/Certifications:

  • Food Handler Certification
  • Valid Driver's License

Working Conditions:

  • This position may require standing for long periods of time and working around equipment that produces a good degree of heat.
  • Frequent lifting of 50 pounds, use of sharp cutlery, kitchen equipment, hot liquids, etc., in addition to high heat.

  • This position requires a highly motivated, organized individual who communicates, cooperates, and can adapt to changing situations.
  • A commitment to long days and a personality that is well-versed in dealing with both front-of-house and heart-of-house business.
  • Must show control and leadership to ensure a positive and efficient crew.
  • Must be able to maintain stability under pressure.
  • Excellent communication skills, both oral and written.
  • Must work closely with culinary staff, sous chefs, and front-of-house team members to ensure good relations.
  • Works closely with the Sales and Catering team and respective clients on menu design.
