Swamp Dawg Restaurant Management Group (SDRMG) is seeking an experienced, driven, and highly organized Director of Operations to oversee and support restaurant operations across our growing brands, including:
Mellow Mushroom,
Shuckin' Shack Oyster Bar,
Eggs Up Grill,
Mooyah,
and The Remedy Dog Bar.
This role is responsible for helping lead day-to-day operations, developing management teams, improving overall store performance, strengthening operational systems, increasing profitability, and helping position SDRMG for continued growth and expansion.
We are seeking a seasoned hospitality professional with strong leadership abilities, operational awareness, and proven multi-unit restaurant experience who can step into a fast-paced environment and help elevate accountability, consistency, culture, and execution across all locations.
RESPONSIBILITIES
- Oversee daily operations across all restaurant brands
- Work directly with General Managers to improve operations, staffing, guest experience, team culture, and financial performance
- Ensure management teams are maintaining company standards, systems, accountability, and hospitality expectations
- Help drive sales growth, operational efficiency, and overall profitability across all locations
- Monitor and assist with labor management, scheduling, food cost controls, inventory practices, and operational consistency
- Analyze operational performance and proactively identify areas for improvement
- Assist with implementing and strengthening systems, structure, and accountability measures across the company
- Support hiring efforts, management development, coaching, and leadership training initiatives
- Hold management teams accountable while also supporting their growth and development
- Work closely alongside ownership, the Catering Director, and the Community & Events Coordinator to support company growth initiatives and drive traffic
- Maintain strong communication and alignment between ownership and restaurant leadership teams
- Assist with guest recovery situations, operational problem-solving, and high-level store support when needed
- Help oversee operational transitions, new initiatives, and future expansion opportunities
- Ensure stores are operating professionally, efficiently, consistently, and in alignment with SDRMG standards
- Be physically present in stores regularly to support teams, evaluate operations, and maintain visibility within the company
- Assist with creating a strong culture of hospitality, urgency, accountability, teamwork, and continuous improvement across all brands
QUALIFICATIONS
- Minimum 5+ years of multi-unit restaurant management or Director-level hospitality experience preferred
- Strong leadership, communication, and team development skills
- Well-seasoned restaurant operator with experience in high-volume hospitality environments
- Proven ability to lead, coach, and develop management teams
- Experience with P&Ls, labor management, food cost controls, inventory systems, and operational reporting
- Strong organizational, analytical, and problem-solving abilities
- Ability to multitask, prioritize, and adapt in a fast-paced hospitality environment
- Hands-on leadership style with strong attention to detail and operational follow-through
- Experience implementing systems, processes, and accountability measures preferred
- Comfortable having difficult conversations, coaching leadership teams, and addressing operational challenges directly
- Technology/POS familiarity and operational systems knowledge preferred
- Must be dependable, professional, proactive, and growth-minded
- Nights, weekends, and occasional holidays may be required based on business needs

This role will work closely with ownership and company leadership to help strengthen operations and continue positioning SDRMG for future growth and expansion.
