JOB TITLE: Registered Dietitian/Assistant Director

REPORTS TO: Child Nutrition Director

SUPERVISES: Assists Child Nutrition Director in the supervision of Child Nutrition Kitchen Managers and other Child Nutrition Team Members. Conducts supervision of staff in director’s absence

NATURE AND SCOPE OF JOB:

1. Assists the Child Nutrition Director in supervising, managing and coordinating Child Nutrition Programs and department staff.
2. Ensures compliance with federal, state, and local laws/regulations pertaining to USDA’s Child Nutrition Programs.
3. Provides training, leadership and coaching to Child Nutrition personnel in one-on-one, small group and large group settings.
4. Manages and coordinates the effective use of Child Nutrition software and special diets.

QUALIFICATIONS:

1. Education Required:
   1. Bachelor’s degree or equivalent educational experience, with academic major in dietetics or related field.
   2. Dietetic internship or similar American Dietetic Association approved program required.

1. Certifications:
   1. Must be a Registered Dietitian with the Commission on Dietetic Registration (CDR) or obtain registration within three months of hire date.
   2. Licensure in the State of South Dakota required.
   3. ServSafe certificate preferred but not required.

1. Experience:
   1. Two (2) years of experience in related field preferred.

1. Skills and Abilities:
   1. Knowledge of safe and sanitary food preparation and serving practices.
   2. Regular attendance and punctuality.
   3. Knowledge of the United States Department of Agriculture (USDA) Child Nutrition Program regulations preferred.
   4. Proficiency in reading and interpreting documents such as safety rules, operating and maintenance instructions, SOPs and procedure manuals.
   5. Advanced computer and math skills necessary for preparing recipes, inventory management and financial transactions.
   6. Ability to work effectively under pressure, demonstrate sound judgment and maintain integrity.
   7. Commitment to providing excellent customer service, welcoming feedback, accepting responsibility for own actions and working collaboratively with others.
   8. Ability to effectively communicate in a professional manner both written and orally.
   9. Maintain confidentiality regarding school/workplace matters.

1. Physical Requirements:
   1. Ability to lift and carry up to 40 pounds.
   2. Adhering to high standards of personal hygiene.

JOB FUNCTIONS AND RESPONSIBILITIES: This job description outlines the general expectations for this position. It is not an exhaustive list of all duties, responsibilities or qualifications.

1. Knowledge and Skills:
   1. Knows, understands, and assists with implementing the requirements of the Child Nutrition Program.
   2. Requires excellent computation skills for performing a variety of formulations including quantity food extension, caloric content, nutrient analysis, labor costs, staff meals per labor hours, menu cost, and portion/serving size costs.
   3. Reasoning skills are required for dealing with complex personnel situations, operational troubleshooting and crisis, and vendor communication.

1. Compliance and Oversight:
   1. Ensure all menus and food served complies with USDA Child Nutrition Program regulations and district policies.
   2. Assists in planning menus to ensure that all meals served meet nutrition and meal pattern requirements adhering to USDA guidelines for Child Nutrition Programs.
   3. Oversee menu analysis software.
   4. Supervise development of special menus for students with special diet needs and food allergies and coordinate diet needs with school nursing staff and families.
   5. Lead Wellness Committee efforts, ensuring the school district and USDA Child Nutrition Program requirements are met as Wellness Committee Chair.

1. Personnel Management:
   1. Assist with providing direct assistance to Child Nutrition Kitchen Managers and Child Nutrition Team Members.
   2. Supervise and support Child Nutrition staff as needed by Setting clear expectations, communicating with them effectively and holding staff accountable.
   3. Identify and resolve problems in a timely manner. Make sound decisions, clearly explain the rationale and implement solutions effectively.
   4. As needed, provide back-up support to kitchens for the purpose of providing overall coverage of Child Nutrition operations. Assist in kitchens with food preparation, cooking, serving, cleaning and sanitizing as needed.

1. Operational Management:
   1. Provides technical assistance to Child Nutrition staff to implement program goals and objectives.
   2. Monitors working conditions in all facilities and recommends methods for increasing efficiency and safety.
   3. Provides on-the-job training in work scheduling, equipment use and care, food production, nutrition, sanitation, storage, recordkeeping, nutrition education and human relations.
   4. Utilize back of house software for menu planning, nutritional analysis, procurement/purchasing, item receipt, and inventory management.
   5. Prioritize and plan work activities efficiently and seek opportunities to be more efficient.
   6. Conserve organizational resources.

1. Sanitation and Safety:
   1. Train employees in proper sanitation methods and food safety practices.
   2. Maintain a clean, organized and hazard-free office environment.
2. Equipment Management:
   1. Maintains a working knowledge of kitchen equipment and operation and ensures equipment is properly maintained.
   2. Safely operate and oversee the maintenance of kitchen equipment.
   3. Assist Child Nutrition Director in evaluating equipment issues immediately.

1. Administrative Duties:
   1. Ability to exercise discretion and work with limited supervision and guidance.
   2. Assist Child Nutrition Director in determining staff requirements for each school.
   3. Assist Child Nutrition Director in recruiting, hiring, and performance management of Child Nutrition staff.
   4. Assist Child Nutrition Director in developing and implementing professional growth and certification activities for staff.

1. Other Departmental Duties:
   1. Implement and oversee nutrition education in the classroom, following Child Nutrition Department current procedures.
   2. Assist with catering events, including menu planning, purchasing, and facilitating the event(s).
   3. Assist with program marketing including signage, menu boards, labels, static clings, pamphlets, and digital displays.
   4. Collaborate with school districts involved in the ‘Dakota 13’ Shared Services Partnership, ensuring menus comply with USDA’s Child Nutrition Program guidelines and requirements.

1. Perform other duties as assigned.

WORKING ENVIRONMENT:

1. Primarily in an office setting, with frequent sitting and prolonged computer usage.
2. Occasional work in kitchens, where there may be frequent standing, walking, bending, carrying and reaching, as well as exposure to:
3. Cleaning chemicals, fumes and mechanical/electrical hazards.
4. Extreme cold, warm, or humid temperatures.
5. Slippery wet or greasy floors and surfaces.
6. Occasional exposure to repetitive wrist and hand motions and frequent loud noises. Constant hand-eye and mind-eye coordination.
7. Potential for frequent interruptions and schedule changes.
8. Frequent travel among all schools within the district.
9. Regular Attendance

TERMS OF EMPLOYMENT:

Twelve (12) Months. Salary, work and benefits to be established by the Board of Education

Performance of this job is to be evaluated in accordance with provisions of the Board’s policy on evaluation of support services personnel.

SALARY RANGE: Determined by the Board of Education.
