Position Purpose:

The Chef and Production Manager, under the direction of the Director of Dining Services, is responsible for the overall operation of the Dining Services Department, including menu planning, ordering and supervision of the Chefs, Cooks as well as all team members in Dining Services.

Minimum Qualifications:

  • Possesses, at a minimum, a high school diploma.
  • Possesses, at a minimum, a culinary degree or in lieu of degree, a minimum of 4 years in fine dining and/or long term care cooking
  • Has at least one (1) year dining services experience in a supervisory capacity.
  • Is ServSafe certified.
  • Is knowledgeable of dining services procedures relating to retirement community operations.
  • Is able to read, write, and communicate effectively in the English language.
  • Is able to see and hear or use prosthetics that will enable these senses to function adequately so that the requirements of this position can be fully met.
  • Possesses leadership ability and the willingness to work with and supervise professional and non-professional team members independently and harmoniously with flexibility and integrity, as well as with team members, residents, family members, volunteers, government agencies/personnel, and the general public.
  • Is able to relate to and work with the ill, disabled, elderly, emotionally upset, and at times, hostile people within the Community.
  • Moves equipment and supplies weighing up to 50 lbs. on a regular basis.
  • Must be fully up-to-date with required vaccinations.

As a Chef and Production Manager you can expect to:
  • Assists the Dining Services Director in planning, developing, organizing, implementing, evaluating, and directing the Dining Services department, its programs and activities. Responsible for directing the department in the absence of the Director.
  • Ensures that a fine dining experience is offered to our residents by overseeing the menu planning and cooking of appetizing meals.
  • Oversees food preparation and food service to assure proper procedures are followed at all times.
  • Maintains stock inventories, and ensures adequate food supplies are in stock; orders food/supplies and monitors cost.
  • Ensures that kitchen equipment is maintained.
  • Supervises dining services team members to ensure that they perform their responsibilities following ERS's expected behaviors and established policies and procedures at all times. This includes checking on food preparation, service levels, and room tray accuracy.
  • Develops, coordinates, and maintains a good working rapport within the department and with other departments in the Community to assure that department services and activities are completed to meet the needs of the residents.
  • Promotes resident safety.
