Purpose

The Bakery Manager is responsible for the overall operation, profitability, production, merchandising, and staffing of the Bakery Department. This position leads bakery team members, ensures exceptional product quality and customer service, maintains food safety and sanitation standards, and drives sales while controlling labor, shrink, and operating expenses. The Bakery Manager is accountable for creating an inviting bakery experience through fresh products, attractive displays, and strong team leadership.

Key Responsibilities Leadership & Team Development

  • Lead, coach, train, and develop Bakery Department employees, including assistant managers, bakers, decorators, and bakery clerks.
  • Recruit, interview, hire, and onboard new team members.
  • Conduct performance evaluations and provide ongoing coaching and feedback.
  • Foster a culture of accountability, teamwork, and customer service excellence.
  • Create schedules that support operational needs while managing labor costs.

Department Operations

  • Oversee all day-to-day Bakery Department operations.
  • Manage product production, merchandising, inventory, and department presentation.
  • Ensure proper preparation, packaging, labeling, and storage of bakery products.
  • Monitor department conditions for cleanliness, organization, and food safety compliance.
  • Coordinate production levels to meet customer demand while minimizing waste.

Customer Service

  • Deliver exceptional customer service and foster a customer-focused environment.
  • Assist customers with product selection, special orders, and custom cake requests.
  • Resolve customer concerns professionally and promptly.
  • Build customer loyalty through quality products and personalized service.

Merchandising & Sales

  • Execute bakery merchandising plans, promotional programs, and seasonal displays.
  • Maintain attractive, fully stocked, and properly signed displays.
  • Monitor sales trends and adjust production and ordering plans accordingly.
  • Identify opportunities to increase sales and improve department performance.
  • Ensure bakery products meet company quality and presentation standards.

Inventory Management & Shrink Control

  • Manage ordering, receiving, inventory control, and product rotation processes.
  • Maintain appropriate inventory levels while minimizing spoilage and waste.
  • Monitor department shrink and implement corrective action plans as needed.
  • Ensure accurate inventory records and reporting.

Financial Performance

  • Manage labor, expenses, and department profitability.
  • Review sales, margin, shrink, and productivity reports regularly.
  • Develop action plans to achieve financial and operational objectives.
  • Support store-wide sales growth and profitability goals.

Food Safety & Compliance

  • Ensure compliance with food safety, sanitation, and regulatory requirements.
  • Maintain proper temperature controls, product handling procedures, and sanitation practices.
  • Ensure all bakery equipment is maintained and operated safely.
  • Promote and maintain a safe working environment for employees and customers.

Product Quality & Production

  • Ensure bakery products consistently meet company quality standards.
  • Monitor freshness, presentation, and availability of all bakery items.
  • Oversee cake decorating, scratch baking, and production activities as applicable.
  • Maintain high standards for custom orders, specialty products, and seasonal offerings.
