Thunder Island Brewing Co is now hiring for a Sous Chef.


Tips are pooled between FOH and BOH. Kitchen staff receive 33% of all tips. The restaurant is fully air-conditioned - even the kitchen!

Overview: We are looking for an experienced Sous Chef to join our fast-paced and growing Taproom. This is a leadership position co-managing our Taproom Kitchen operations, reporting directly to our Executive Chef. Individuals applying for this position must have a proven track record of successfully managing a kitchen and staff. More importantly, the Sous Chef should have a passion for creatively incorporating our handcrafted beer into menu items, have a passion for big ideas such as beer pairing dinners, featuring locally sourced ingredients, and celebrating the bounty of the Pacific Northwest.


Accordingly, the Sous Chef is expected to work side by side with the Executive Chef to coordinate all aspects of the Taproom s back-of-house operations. The main responsibilities include assisting the Executive Chef in all daily operations, menu development and costing, managing kitchen staff, planning for seasonality, documentation of recipes and SOPs, maintaining quality control, budgeting, managing inventory and purchasing, coordinating equipment and supply maintenance, and general Taproom kitchen operations. You must have or be able to obtain an Oregon Food Handler s Card and your OLCC license. This position requires the ability to drive company vehicles, individuals must have a valid driver s license and a clean driving record. Candidates must meet or exceed all listed requirements and qualifications as outlined in this job description.


Essential Skills:

  • Creative recipe development, documentation of recipes, and creation of necessary training manuals

  • Ability to balance administrative tasks with being on the floor during peak hours

  • Strong analytical skills to manage food costs, profit margins and labor costs

  • Ability to coach, mentor and manage staff and to enforce company policies

  • Exceptional communication (verbal and written)

  • Ability to jump in and help resolve any problems that come-up in the kitchen


Job Responsibilities:

  • Oversee day-to-day BOH Taproom operations

  • Lead and work the line when needed, oversee staff in preparing and executing menu items

  • Monitor the quality and presentation of all food

  • Track, record, and maintain inventory stock including food, and kitchen supplies

  • Implement and track routine maintenance on kitchen equipment, such as refrigeration, ovens, grills, etc.

  • Hire talent and train all BOH staff to meet performance expectations

  • Prioritize and delegate tasks to kitchen staff, motivate staff and maintain a cohesive team

  • Maintain a clean kitchen, and abide and implement all food safety and sanitation laws

  • Work closely with the Food & Beverage Director and provide recommendations for process improvements, service improvements, increased profitability, and staff performance

  • Help coordinate kitchen and All Staff team meetings as needed

  • Create menus and catered industry events and special events as business dictates

  • Control all purchasing, ordering, and receiving; including putting away/rotating products

  • Manage the daily BOH schedule and make adjustments as business dictates

  • Perform other duties as requested by the Executive Chef.


Requirements and Qualifications

  • 4+ years experience in a comparable position

  • 2+ years experience directly managing a diverse staff with varying skill levels

  • Intermediate computer skills, proficiency in Google products, or Microsoft Office and Excel, or comparable software is expected

  • Strong working knowledge and experience operating complex kitchen equipment

  • 2-year Culinary Arts Degree and/or other certification is a plus!

  • ServeSafe certification is a plus!

Work Environment

  • Physical strength and agility necessary with the ability to lift 50 lbs repeatedly

  • The ability to work on your feet for long periods of time

  • The ability to work a flexible schedule including a rotating schedule of early morning, late evening, weekend work and holidays
