Overview:

Key Responsibilities

Supervise daily production operations focused on retail raw beef and/or pork cuts, ensuring safety, quality, yield, and throughput targets are consistently met.
Lead, coach, and develop hourly production teams.
Oversee and support meat fabrication processes (primal to subprimal to retail cuts), ensuring consistency, minimal trim loss, and adherence to specifications.
Drive yield performance, monitor giveaway and waste, and implement corrective actions to improve profitability
Ensure proper execution of modified atmosphere packaging (MAP) processes, including seal integrity, gas ratios, and product presentation
Enforce USDA, GMP, HACCP, and food safety standards, maintaining audit-ready operations at all times
Partner with QA, Maintenance, and Sanitation to resolve issues impacting yield, downtime, and product quality
Drive performance through KPIs, labor planning, scheduling, and productivity metrics
Identify and execute continuous improvement initiatives focused on efficiency, waste reduction, and line optimization
Ensure accurate production reporting, yield tracking, and shift handoffs
Required Experience & Qualifications
3+ years of supervisory experience in meat processing (beef and/or pork required — not poultry-only)
Hands-on experience with retail meat cuts, including knowledge of primal and subprimal breakdown
Proven experience managing yield performance, including waste reduction and trim optimization
Experience working in a USDA-regulated environment
Exposure to or hands-on experience with modified atmosphere packaging (MAP)
Proven ability to lead teams in a fast-paced, high-volume production environment
Strong working knowledge of GMPs, HACCP, OSHA, and food safety compliance
Comfortable working on the production floor in cold, wet, and physically demanding conditions
Strong leadership, communication, and accountability skills

Preferred Qualifications

Hands-on cutting/fabrication background (ability to pass or evaluate a cutting test is a strong plus)
Experience supervising butchers or meat cutters in a retail or foodservice production environment
Familiarity with MAP equipment and packaging systems (tray sealers, gas flushing, etc.)
Bilingual (English/Spanish)
Experience with production systems, yield tracking, and KPI dashboards
Background in lean manufacturing / continuous improvement (5S, waste reduction, line efficiency)
