The Fish Prep/Cutter is a skilled worker responsible for handling, cleaning, cutting, and storing prepped fish and seafood products for use in the restaurant. The ideal candidate will have expertise in de-boning, fileting, and portioning while ensuring minimal waste and maintaining specific hygiene standards in a fast-paced environment. This role requires strict adherence to all food safety and sanitation guidelines, as well as state and federal regulations.
- Processing & Preparation: Clean, scale, gut, skin, trim, and fillet various types of fresh and frozen fish and shellfish according to Company standards.
- Portioning & Storing: Accurately cut and portion fish into steaks, fillets, or other required sizes before weighing and labeling products for immediate use or storage.
- Quality Control: Inspect all incoming and prepared products for defects, bruises, or blemishes, removing any inedible parts and ensuring all items meet quality specifications.
- Equipment Operation & Maintenance: Safely and proficiently use specialized tools and equipment including knives, cleavers and processing machinery. Clean and sanitize all work areas and tools after use.
- Safety & Compliance: Follow all Occupational Health and Safety (OSHA) regulations and company food safety/handling procedures to prevent cross-contamination and maintain a safe work environment.
- Inventory Management:Assist with receiving deliveries, stocking, rotating products (using the FIFO method), and tracking yields and inventory as needed.
Qualifications & Skills
- Minimum 1-2 years of experience as a Fish Cutter, Butcher, or in a similar food preparation role is preferred.
- Proficiency in knife skills and ability to recognize the use of various types of fish.
- Strong understanding of hygiene and safety regulations in food processing environments.
- Ability to work efficiently under pressure and maintain a high level of attention to detail and accuracy.
- Strong communication skills and the ability to work effectively as part of a team.
- Willingness to work flexible hours, including weekends and holidays, as required by business needs.
Education
school diploma or G.E.D. is typically required. On-the-job training may be provided.
