The Malarkey - Chef/Partner - NO BS - Looking for Greatness (The Pearl - Portland)
The Brothers Malarkey

Let s Build an ICONIC Restaurant to Celebrate Portland & the Pearl!
Wood Fire Steak & Seafood
We re opening The Malarkey, a new upscale Pacific Northwest restaurant in Portland built around live-fire cooking, great steak, pristine seafood, and a packed dining room.
We re looking for an Executive Chef who LOVES the Craft & Making $!
Someone who knows how to run a busy kitchen, lead from the line, build a loyal crew, and create the kind of culture where cooks actually want to get better.
This isn t a corporate chef job. You need to know how to run numbers as well as make great food. Labor / Food Cost etc
This is about building a real restaurant with real energy and real hospitality.

You should:
Know how to run a high-volume kitchen profitably
Love live-fire cooking, steak, seafood, and great ingredients
Be a leader, mentor, and culture builder
Have a deep respect for the craft and the team
Still have that fire for the restaurant business

What we offer:
Strong compensation
Creative input on menu and kitchen
A serious leadership role
Potential partnership/equity for the right chef

FACTS:
If you re the kind of chef who blames the team, the purveyors, or the city when things get tough, this probably isn t the place for you.
If you lead from the front, take pride in the work, and know how to build a crew that has each other s backs we should talk.

I ve spent my life in restaurants and I believe great places are built by great people who care about the craft and the team around them. If you re the kind of chef who wants to build something special, develop young cooks, and be proud of the room you re running every night, I d love to hear from you.
