REPORTS TO: Administrator and Corporate Designee
SUMMARY:The purpose of the Dietary Manager is to prepare and serve high quality meals to the residents while meeting all governing agency regulations. To plan, develop, direct, and control the functions of the Dietary Department.
DUTIES AND RESPONSIBILITIES:
The following represents the essential functions of the Dietary Manager's role. This list is intended to be a general description of duties and responsibilities; however, it is subject to change according to the needs of the facility determined by the Administrator and/ or corporate designee.
- Oversees Dietary Department functions to serve quality, nutritious meals to residents according to their ordered diet.
- Assures correct procedures are followed in food preparation and inspects quantity, quality, temperature, and appearance of food prior to serving.
- Maintains accurate meal tray cards so that all staff are knowledgeable of resident's ordered diet, liquid consistency, allergies, and/or preferences.
- Posts menus for residents daily.
- Adjusts recipes/ menus to meet nutritional requirements with approval of the Registered Dietician.
- Provides substitute meals as requested by residents.
- Organizes and posts dietary department staff schedule.
- Assigns tasks to dietary department staff and monitors for completion/ performance.
- Solves issue of staffing shortages and call outs as they occur.
- Places orders for food according to menu, serving ware, and kitchen supplies to ensure appropriate items are readily available for the dietary staff and residents.
- Plan equipment servicing and repairs per the instruction of the Administrator and/or corporate designee.
- Place orders for new equipment with prior approval of the Administrator and/or corporate designee.
- Orders are placed within approved budget constraints.
- Ensures kitchen is maintained as required by state and federal governing agencies' regulations and standards.
- Maintains MSDS sheets per requirements and ensure staff knows location.
- Keeps kitchen clean and organized.
- Keeps work area clean and organized.
- Completes resident assessments timely including required supporting documentation.
- Ensures all staff entering the kitchen area are clean and well-groomed according to regulations and facility dress code (Ex: hairnets, aprons, non-slip shoes).
- Trains and in-services all dietary staff to be competent within their work assignments.
- Identifies and corrects possible safety hazards.
- Member of the Interdisciplinary Team (IDT).
- The Dietary Manager participates in Daily QA (morning) Meetings, Monthly/ Quarterly QA, Safety Committee Meetings, Resident Council Meetings when requested, Care Plan Meetings, in-service trainings, continuing education programs, and all other meetings called by Legacy or licensing entities.
- Participates in new hire orientation program by introducing oneself and explaining the basic functions of the dietary department.
- Works with residents and the Activity Department to cater to their dietary needs and wishes when possible and within reason.
- Coordinates with Activity Department to plan Meal of the Month and other special events.
- Works with the Registered Dietician and nursing staff to improve/maintain residents' dietary well-being.

QUALIFICATIONS/ EXPERIENCE/ REQUIREMENTS:
Minimum Qualifications
o Freedom from illegal use of drugs.
o Freedom from use and effects of drugs and alcohol in the workplace.
o Anyone found guilty by a court of law of abusing, neglecting or mistreating individuals in a health care related setting are ineligible for employment in the position.
Education and/or Experience
o Successful completion of an approved state food service supervisor course is required.
o Experience in Long-Term care setting preferred but not required.
o Management experience preferred.
