Basic Function:

Responsible for performing all tasks required for the preparation, production and service of food for scheduled meals and events. 

The Cook's schedule is assigned by the Dietary Manager. The community has a cook on site 7 days a week and may work rotating shifts, holidays, and weekends as scheduled. Additional non-scheduled hours may be required.  


Qualifications:

-2 years as a Chef or Cook in a restaurant and/or commercial kitchen with batch cooking

-Working Knowledge of food preparation

-Knowledge of food safety regulations or ServSafe Certified  


Supervision Received:

Reports directly to Dietary Manager


Essential Functions:

1. Reads menu and recipe before beginning food preparation to ensure complete comprehension of items being prepared and estimate amount of food needed to ensure sufficient quantities are prepared while also holding excess to a minimum.

2. Demonstrates the ability to properly utilize all kitchen equipment (i.e. ovens both regular and convection, grills, flat top, steam kettles, etc.).

3. Measure and prepare ingredients in accordance with recipe or prepackaged instructions.

4. Demonstrates the ability to understand and apply cooking terms (i.e. bake, broil, roast, broil, sauté, steam, etc.)

5. Season, dress, and garnish food appropriately

6. Maintains high standards of cleanliness and order in the kitchen and related areas.

7. Checks all incoming food supplies for quality and stores supplies properly using the “FIFO” and ServSafe Guidelines.

8. Maintains inventories of food and kitchens supplies reporting shortages to the Dietary Manager

9. Cleans and sanitizes kitchen and equipment according to schedule

10. Exercises safety precautions in all aspects of duties.

11. Substitutes for Dietary Manager in their absence.

12. Is responsible for weighing and measuring ingredients and performing simple mathematical computations.

13. Observes and tests foods being cooked by tasting, smelling, and piercing with fork to determine that it is cooked.

14. Always checks the menu daily for upcoming food to be pulled from the refrigerator or the cooler.

15. Other duties as assigned by Dietary Manager
