Seeking talented, dedicated and multi-faceted garde manger cook for our high season
on the beautiful island of Vieques. This position is for individuals passionate about food,
who take pride in their craft and find satisfaction in the pace of a busy service in a
supportive, creative environment.

El Quenepo is an established, owner-operated, intimate fine dining restaurant with a
relaxed coastal soul. We pride ourselves on beautifully executed, locally inspired
international cuisine and a collaborative kitchen culture. Our 55-seat restaurant is
known for creativity, bold flavors, a commitment to local ingredients, and preparing
every dish from scratch. Our team works hard, supports one another, and celebrates
the joy of creating memorable dining experiences all while waging our ongoing
war against mediocre cuisine.
The Role
The garde manger station primary focus include the preparation and execution of
hot and cold appetizers, salads, and desserts. Precision, organization, and a strong
sense of timing are essential, as this station plays a key role in both the opening and
flow of service.
Your primary goal will be to prepare high-quality dishes that meet the chef s exact
specifications and our established recipes. You ll be part of a small, professional
team oriented kitchen where every station matters. From careful prep work to
precise plating, your contribution will directly shape the guest experience.
Responsibilities:
Set up and stocking the station with all necessary supplies.
Prepare food for service (e.g., chopping vegetables, preparing ingredients or
preparing dressings, etc.)
Cook menu items in cooperation with the rest of the kitchen staff.
Ensure that food comes out simultaneously, in high quality and in a timely fashion.
Answer, report and follow Chef or Sous Chef s instructions.
Clean up station and take care of leftover items.
Stock inventory appropriately
Maintain a positive and professional approach with coworkers and customers.
Requirements and Skills:
Required: Minimum 5 year experience
Required: A true desire to learn, strong work ethic, have an anything, anywhere,
anytime attitude.
Self discipline
Proven cooking experience, including experience as a Line Cook.
In-depth knowledge of various cooking methods, ingredients, equipment and
procedures.
Light pastry skills.
Excellent communication and organizational skills.
Excellent multi-tasking skills and aptitude to learn new skills.
Excellent knife skills and attention to detail.
Accuracy and speed in executing assigned tasks.
Familiar with industry s best practices.
Must be flexible, detail oriented and have a passion for creating incredible food. An
upbeat positive vibe is a must.
Must be able to work cooperatively and efficiently in a team.
Must be available to work weekends and holidays.
Physical endurance to work long shifts in a hot, hectic environment; stand, walk,
bend, use hand appliances; and lift heavy items for extended periods of time.
Must commit to work until end of July.

Employee Housing- Private bedroom in a shared house. Rent is required and
deducted from payroll. Walking distance to work.
The restaurant closed on Thanksgiving Day, Christmas Day and New Years Day.
We are also closed for 2 months per year, allowing you to travel the world (and
learn more about food).
Living on an incredible island that most people only get to visit for one week per
year.
