Assistant Director Dinning Services - Full Time
- Full time. 40 hours a week. 11:00am-7:30pm Tues-Sat Weekends/Holidays Required.
Job Description
Assists the Director of Dining Services with the overall operation of the Dining Services Department to include budgetary review, team member development, and menu planning. Responsible for maintaining an atmosphere of "fine dining" in all areas and overseeing all special event functions. Coordinates all departmental in-service programs.
EDUCATION, EXPERIENCE, CERTIFICATION AND LICENSURE REQUIREMENTS
- High School diploma or equivalent.
- Certification as Dietary Manager preferred.
- 5+ years of managing experience in fine dining and health services dining.
- No licensure required but ability to become Serve Safe certified is required.
Job Duties
- Assists the Director of Dining Services with overall operation of the Dining Services Department. In the absence of the Director, assumes responsibility for operations of the department.
- Supervises all dining room team members and maintains adequate staffing levels.
- Responsible for server recruitment. Interviews and recommends candidates to the Director of Dining Services. Evaluates team member performance and makes recommendations on disciplinary actions if necessary.
- Organizes, directs, supervises, and assigns responsibilities to Dining Room team members and counsels team members, as necessary.
- Conducts routine training programs in meal etiquette, serving techniques, and sanitation standards related to handling and serving food.
- In consultation with Executive Chef, facilitates a pre-service orientation for team members before each meal to discuss food being served and any special instructions.
- Completes weekly schedules for dining room personnel.
- Inspects serving line and works closely with Executive Chef to ensure delivery is neat, palatable, attractively garnished, and correctly served.
- Ensures that routine cleaning of the dining room and service area is completed.
- Responsible for maintaining the daily tally sheet, a record of resident and guest meals.
- Maintains good public relations with the residents. Greets residents by name, attends to resident requests, problems, comfort, and other needed services.
- Responsible for enforcing approved dining room guidelines.
- Oversees special functions. Assures the event is set up as outlined in the special events form. Schedules personnel for these events and briefs them on the details and procedures. Meets with residents to coordinate functions, as necessary.
- Serves as Manager on Duty in the absence of Director of Dining Services, Executive Chef or Dietitian; also serves as weekend Manager on Duty.
- In consultation with Director, Executive Chef, and Dietitian, write cycle and therapeutic menus, recipes, and production sheets to include "Heart Healthy" selections.
- Ensure resident satisfaction.
- All other duties as assigned.
Knowledge, Skills, and Abilities
- Advanced knowledge of dining room and kitchen operations to perform management duties of the dining experience at the community.
- Advanced knowledge of food service and presentation as well as customer service and sanitation.
- Knowledge of food production, hosting, and serving.
- Ability to compute basic math.
- Good communication skills and experience working with older adults.
- Ability to manage team members and manage scheduling, payroll, budget, and service.
- Proficiency with Microsoft Office – word processing and spreadsheets.
PHYSICAL REQUIREMENTS AND WORKING CONDITIONS
- Ability to lift up to 50lbs.
- Extensive walking, bending, stooping, standing, pulling, pushing, and carrying.
- Ability to understand verbal and written instructions in English.
- Ability to taste and smell.
- Exposure to heat and cold.
- Ability to work in a fast-paced environment with multiple tasks.
- Ability to work inside and outside to effectively make rounds daily throughout the facility and respond to problems and emergencies.
- Universal staffing, holiday, inclement weather, and a flexible work schedule are required.
- Exposure to the sights, sounds, and smells of a typical health services environment including persons with dementia.
