The Isle Casino Hotel & Lady Luck Casino are seeking a Junior Sous Chef(Otis & Henry's) to join the team!
The Ideal Junior Sous Chef(Otis & Henry's) will be responsible for the preparation of all food items according to standard recipes and menus to ensure the consistency of the product to our guests.
The ideal Junior Sous Chef(Otis & Henry's) candidate will be able to open & close the kitchen responsibly and in a proper fashion.
In this role the ideal candidate will be able to conduct daily shift meetings and communicate expected business levels and production quantities to the staff.
The ideal candidate will be able to strive for picture perfect plate presentation on a continual basis.
The Junior Sous Chef(Otis & Henry's) candidate will be able to provide clear direction, instruction, guidance and training to the kitchen staff.
The ideal Junior Sous Chef(Otis & Henry's) candidate will also be able provide daily assignments and instruction to the Utility Helper, Cook I, Cook II, & Cook III positions.
In this role the Junior Sous Chef(Otis & Henry's) will be able to prepare written food requisitions for supplies and food items for production in the work station while maintaining the control procedures necessary for food costs and quality.
They will also be able to prepare compound sauces and derivatives of the mother sauces.
The ideal Junior Sous Chef candidate(Otis & Henry's) will be able to follow the departmental policies and procedures through a thorough achievement of performance goals and meeting taste & quality expectations set forth by the Chef amongst other guidelines set forth daily.
The ideal candidate will be able to maintain a clean & organized kitchen at all times.
They will also be able to present a complete menu for our guests on a daily basis.
The ideal Junior Sous Chef(Otis & Henry's) candidate will be able to accurately perform all the job duties assigned in a high-volume, fast paced & interruptive environment.
As with all of our positions the Junior Sous Chef(Otis & Henry's) will ensure that every guest is being greeted with a smile and treated like family!
Responsibilities and Duties:
In this role the Junior Sous Chef(Otis & Henry's) will be able to handle all food production in the assigned venue.
The ideal Junior Sous Chef(Otis & Henry's) candidate will be able to work both independently & as a member of a team on a daily basis.
The Junior Sous Chef(Otis & Henry's) will have knowledge of the usage of many equipment & tools such as: serving tools, knives, steamer, broiler, deep fryer, grill, kettle, thermometer, slicer, oven, mixer & pizza oven.
The ideal Junior Sous Chef(Otis & Henry's) candidate will be able to work an irregular work schedule based upon company needs in an interruptive environment.
Qualifications and Skills:
High school diploma or GED equivalent preferred.
Three years minimum experience in food preparation and food knowledge preferred.
The Junior Sous Chef(Otis & Henry's) will be proficient in all functions & requirements of the Cook II and Cook III positions.
The ideal candidate will be able to read & write recipes and understand labeling proficiently.
Knowledge of PPE(Personal Protective Equipment and sanitation laws.
The ideal Junior Sous Chef(Otis & Henry's) candidate will encourage & abide by all health department codes and hand washing guidelines.
