Job Description

Work hours: 9:30AM-6:30PM (Tue-Weds OFF)


  • ┬áThe Baker, Bread is responsible for the preparation and baking of breads according to La Brea standards.


  • Understands, reads and executes the production schedule.
  • Sets up oven, proofer, and retarder as required for specific production, including oven temperature and bake times.
  • Prepare products for baking per standard procedure. This includes setting, proofing, thawing, scoring or cutting, placing of toppings like cheese, baking and cooling.
  • Unload products from proofer or retarder and confirms that the products are ready for baking
  • Load products inside the oven and set appropriate temperature, steam (if needed) and time according to company baking guidelines.
  • Unload products from oven and confirm that it is within the quality standard
  • Accurately records information on production documents, including but not limited to oven control setting and spoil sheets in a timely fashion and places completed documents in their designated place.
  • Report mal-functioning equipment to supervisor.
  • Ensures that all tools and utensils, especially the blades used for scoring are kept in safe place and well accounted for.
  • Comprehends and adheres to operational and safety features of oven and proofers.
  • Completes duties in accordance with quality assurance, GMPs, safety and other company programs and procedures in accordance with government codes and regulations.
  • Maintains a clean, organized and safe work area, including wiping equipment, tools, containers and dollies; sweeping and mopping floors and trash removal.
Required Experience


To perform this job successfully, an individual should demonstrate the following competencies:

  • Ability to understand and follow instructions
  • Ability to follow designated process and procedure
  • Ability to check for foreign objects in the product
  • Ability to operate baking equipments like (but not limited to) oven, proofer, sprayer.
  • Ability to learn new tasks efficiently and train others
  • Ability to handle basic mathematical computations pertinent to the job
  • Ability to read basic instructions


  • Preferred but not required; high school diploma or general education degree (GED); or three years of related baking or manufacturing experience and/or training; or equivalent combination of education and training

While performing the duty, the employee will:

  • Stand/walk for the majority of their schedule shift (>95% of the time)
  • Lift, reach, pull, grasp and use hands frequently 80% of the time
  • Reach to shoulder level or overhead and stoop while lifting up to 20 pounds 20% of the time
  • See well enough to: read instructions, oven programs and see the required color of baked bread
  • Push full racks 20 to 30 pounds 30% of the time
  • Hear well enough to receive instructions
  • Must be able to lift 30 lbs.


  • Climb or kneel occasionally 10% of the time
