Job Description

Food Service Assistant Restaurant Manager (Management)

Job Responsibilities

As an Assistant Restaurant Manager, you will primarily be responsible for running the day to day operations for a Pollo Tropical restaurant.  The Assistant Restaurant Manager’s goal is to ensure that your store creates a pleasant environment for guests while delivering fast friendly service with high quality food
in a clean restaurant.

Specific Responsibilities for the Assistant Restaurant Manager will include:


  • Managing and leading a staff while achieving daily and weekly operational targets (i.e. managing food, labor and guest service, etc.)
  • Delegating responsibilities and ensuring work is completed
  • Take on responsibilities as assigned
  • Interacting with guests to ensure positive guest service
  • Administrative and legal compliance during shifts (i.e. health inspections, employee relations, etc.)

Job Requirements

We believe our management staff is among the best in the industry, and we strive hard to find the best candidates possible to work in our restaurants.  The Assistant Restaurant Manager position requires the candidate to have at least 3 years of prior experience managing a restaurantIn addition, the Assistant Restaurant Manager must be comfortable working with minimal supervision while complying and enforcing company policies and practices.

Other requirements for the Assistant Restaurant Manager include:


  • Able to work all shifts and days of week
  • Has high energy and enthusiasm
  • Demonstrates ownership accountability and initiative
  • Previous, proven track record of success
  • Excellent communication skills, verbal and written
  • Must train for 6 weeks in a Florida training restaurant
  • Displays an overall level of confidence while managing and leading
  • Desire to move up and progress within the management team at Pollo Tropical
  • Occasional travel for meetings, rollouts, etc.
