Job Description

Essential Job Tasks:

Ÿ Prepare ingredients accurately as specified by recipe; feed starters, sponges, mother, potatoes, peppers, onions, etc.

Ÿ Prepare and mix ingredients to specified mixing time and temperature.

Ÿ Continually monitor and control temperatures of dough during the mixing process and the final mixing stage of the dough.

Ÿ Add ingredients in the order specified by recipe to obtain desired characteristics.

Ÿ Visually and physically verify the texture of the dough to assure targeted texture characteristics.

Ÿ Monitor and control efficiency of Rheon Line to assure that dough mixes do not exceed the capacity of the Rheon Line.

Ÿ Continually monitor and control ingredient inventory control.

Ÿ Assure that refrigerated ingredients are maintained in the coolers.

Ÿ Assure when specifications allow reuse of waste dough from the Rheon Line that it is incorporated back into the dough mixes by percentages allowed.

Ÿ Assure the weight scales are functioning accurately.

Ÿ Document mixing data accurately and timely.

Ÿ Maintain mixing equipment clean and sanitize.

Ÿ Identified batch containers accurately and weigh as required.

Ÿ Maintain coolers organized, clean; assure ingredients in coolers are identified.

Ÿ Maintain mixing and ingredient areas organized and clean.

Ÿ Lift and dump 50 lbs. flour bags consistently for short periods of times.

Ÿ Monitor that starter on floor does not exceed use time.

Ÿ Assure mixing documents are completed at the end of the shift and placed in their designated place.

  • Works to maintain and improve on the quality, legality and safety of each product and the processes used in their manufacture. Responsible for keeping assigned work area clean and tidy at all times and reporting any potential contamination and suspicious activity to a Supervisor immediately.

Necessary Knowledge and Skills:


Ÿ Ability to understand and follow recipe.

Ÿ Ability to understand and operate mixing process controls and makes adjustment when necessary.

Ÿ Basic knowledge of dough mixing and operating mixing equipment.

Ÿ Ability to follow verbal directions and instructions.

Ÿ Ability to lift 50 lbs. consistently for short period of time.

Ÿ Basic math skills (Addition-Subtraction-Multiplication-Division) and calculating basic percentages.

Ÿ Basic reading and writing skills (English).

Ÿ Ability to comprehend scale and temperature readouts.

Ÿ Effective communication verbal and written.

Ÿ Ability to pull wheeled dough bowl of approximately 1000 lbs.

Ÿ Ability to execute job tasks with minimal supervision.

Ÿ Work in harmony with peers.

Ÿ Ability to document mixing and ingredients data accurately and timely.

Ÿ Manual dexterity/ use of arms, hands to finger.

Ÿ Ability to reach with hands and arms and lift.

Ÿ Ability to perform multiple job tasks, executes job functions with interruptions.

Ÿ Execute job functions safely.
