Overview
From its roots in Boston, Au Bon Pain has grown to become one of the leading bakery café chains. With more than two hundred locations operating in the United States, South Korea, Taiwan, and Thailand, Au Bon Pain is a leader in many trade channels from urban office buildings to airports, hospitals and suburbs.

Au Bon Pain's company owned U.S. cafés are concentrated in Boston, Chicago, New York, Philadelphia, Pittsburgh and Washington. Franchisees’ have cafes in 19 states across the United States.

Marketplace Design
Au Bon Pain has transformed itself into a lively, bustling marketplace where customers personally select their menu choices from individual stations located throughout the café.

Au Bon Pain’s approach to design is to focus on how the food is merchandised. Customers eat with their eyes and the inviting menu items and abundant displays allow them to do so.

Au Bon Pain makes sure the menu continues to provide distinctively tasty items that reflect and reinforce their bread and bakery roots. A new Artisan Bread Collection was rolled out in 2004. Bakery selections include larger and better tasting Zero Grams Trans Fat muffins, more flavorful croissants, baked Focaccia sandwiches, new salads, and more varieties of Au Bon Pain signature soups.

The suburban cafés feature a new décor that includes comfortable bench seating lit by Philippe Starck's "Romeo Moon" lights, computer accessibility and simplified menu boards that are color coded by menu categories. All cafés have Nutritional Kiosks that allow every customer to know the full ingredient listing and nutritional elements of every item.

Further emphasizing Au Bon Pain's motif, the logo and new café color scheme incorporate a blue taken from the Woad flower that’s grown in Provence, France, and a yellow which comes from sunflowers and many Parisian cafés.

"Au Bon Pain's culture has emphasized hospitality and never more so than the last several years as our hospitality rating scores have dramatically increased," said Ed Frechette, Vice President, Marketing, Au Bon Pain. "The new café design accentuates that culture by allowing our café team members to interact more directly with our customers."

Artisan Bread Collection
Au Bon Pain's Artisan Bread Collection is a growing selection of high quality Artisan Breads created from the guidance of French artisan bread master Lionel Poilane. In addition to enjoying a sandwich made with Artisan Bread in the café, customers can browse the Wall of Bread and select a loaf to take home along with one of Private Harvest’s dipping oils.

New Suburban Cafe Concept
Today, Au Bon Pain is adding new café amenities for suburban customers who are seeking a relaxing environment to enjoy breakfast, lunch, an afternoon snack, or dinner.

The new café, which is larger than an urban office building Au Bon Pain, features an expanded color palate, integrating soft aqua shades into Au Bon Pain's traditional Provençal blue and sunflower yellow color scheme. The additional café space makes it possible to have larger seating areas to encourage longer, lingering stays in the café, making this concept not only a convenient stop for breakfast, lunch or dinner, but also a place for families and friends to spend time.

Larger Beverage Area
Coffees, smoothies, juices, teas and cold beverages such as the café's Iced and Frozen Mocha Blasts will have a featured presence in the café's new floor plan.

Nutrition Kiosks
As part of the company's focus on nutrition, recipes for muffins and bagels have been revisited to be zero grams trans fat. In addition, nutrition kiosks have been added to the cafés to allow customers the information to make the right choices.

Nutrition Kiosks for Kids
Expanding on its award-winning Nutrition Kiosk, which provides complete nutrition information for every item on the menu, Au Bon Pain has launched a Kids Nutrition Kiosk in their suburban and hospital locations. The children's version, designed for 4 to 9 year-olds, includes interactive games intended to teach the basics of making healthy meal choices.
