Fleming’s Prime Steakhouse & Wine Bar

(Public)
Restaurant
Overview
In 1998, restaurateurs Paul Fleming and Bill Allen opened the first Fleming’s Prime Steakhouse & Wine Bar in Newport Beach, California. They created a new kind of steakhouse, one with an atmosphere that was stylish, lively and inviting — an inspired, contemporary evolution of an American classic.

From the beginning, Fleming’s has always featured the very finest aged prime beef and fresh seafood with service that is both gracious and indulgent. Our award-winning Fleming’s 100™, offering 100 premium wines served by the glass, is an industry benchmark. With a menu featuring Small Plates, generous sides, decadent desserts and an innovative Bar Menu, Fleming’s has raised the standard of steakhouse dining to a whole new level.

Our promise at Fleming’s is to make every guest visit a memorable celebration of exceptional food, wine and personalized service.

At Fleming’s, we are committed to celebrating the diversity that has always been one of the core strengths of our business. We thrive from the special kind of energy that comes when talented Associates with diverse backgrounds, experiences and perspectives achieve success by working hard, working smart and working together in the spirit of Fleming’s high standards of excellence.
Vision
Philosophy
"People love our steakhouse because we serve fabulous quality comfort cuisine–the food we all grew up with,” says Paul Fleming, founder of Fleming's Prime Steakhouse & Wine Bar. “The difference between Fleming's and other high-end steakhouses is price – most high-end steakhouses charge much more than we do simply because they can."

"The success that we have enjoyed to date is because we understand that this business is about people," says Bill Allen, co-founder of Fleming's. "We surround ourselves with people who are talented and value the contributions of others in the organization. We are a team with many people contributing and my role is to direct them and get out of the way."

Products
Cuisine
Fleming’s Prime Steakhouse & Wine Bar features USDA prime corn-fed beef, aged to perfection and hand-cut daily on site into generously thick steaks. It offers a wide selection of sizes and cuts, ranging from the smallest 8-ounce petite filet mignon to the 40-ounce Porterhouse for two guests. All steaks are seared at extremely high temperatures on gas broilers to seal in the beef’s natural juices and flavors.

While prime beef reigns supreme at Fleming’s Prime Steakhouse & Wine Bar, other flavorful dishes offered include daily-featured selections of fresh seafood, fresh salads, and tasty appetizer selections. Critically acclaimed for its simple fare, the restaurant serves fresh vegetables family-style—among the selections are seven different potato preparations. Tempting desserts include the Chocolate Lava Cake and Crème Brulée.

Wine Program
The signature 100-wines-by-the-glass program is truly a point of differentiation and an integral part of the dining experience at Fleming’s Prime Steakhouse & Wine Bar. Sixty percent of the wines featured in the restaurant have recognizable names, while forty percent represent hard-to-find boutique wines from California, Oregon and Washington. International selections, among them wines from France, Italy, Australia and South Africa are also available.

Special 2-ounce “wine tasting” samples are offered at one-third the price of a full glass to assist diners in finding the perfect wine to complement their culinary choice. The Reserve List includes more than 100 limited-availability wines offered only by the bottle from internationally renowned wineries.
