Overview
In 1906, the California and Hawaiian Sugar Refining Company began refining pure cane sugar in the small town of Crockett, California, near San Francisco. As cargo ships offloaded raw cane sugar from the Hawaiian Islands, the refinery employed 490 people and produced 67,000 tons of refined cane sugar.

Today C&H produces cane sugar and molasses for a vast U.S. market. The Crockett refinery processes over 700 thousand tons of cane sugar annually --more than 70 types, grades and package sizes, including packaged consumer sugars as well as packaged, liquid and bulk granulated industrial-use cane sugars.

The ChefsBest judging process follows a strict, proprietary protocol. All of the ChefsBest judgings are done blind so the chef panelists do not know which brands are being evaluated. To further ensure objectivity, the products are served in random order with only a three-digit code identifying product samples. The products are then judged on many different aspects of taste. To receive the ChefsBest Award for Best Taste, a brand must have a statistically significant quality difference from its competitors. In the event there is no difference among products, no winner is declared.

In addition to being professionally trained in the culinary arts, all of the ChefsBest chef panelists are certified as Master Tasters™. They have been rigorously trained and screened for palate acuity. This screening ensures the chefs' taste buds are sophisticated enough to detect various flavor nuances. In fact, to protect these "prized" taste buds, chefs avoid caffeine, cannot smoke, drink or eat spicy food several hours before judging to prevent any residual flavors from tainting the products being judged.

To uphold the high integrity standards for the ChefsBest Award for Best Taste, the judging process is protected from outside influence. Products are purchased nationwide by ChefsBest, just as a consumer would. ChefsBest determines categories independently of manufacturers. All testing is done outside of manufacturers and they do not pay to be judged. Only one brand within the category can win the ChefsBest Award. There are no second or third place awards so consumers can be sure they are getting the Best product.

Lots of us have been brought up thinking that all sugars are…well…pretty much the same, and that the kind of sugar we use won’t make much difference. Even today, most people don’t know that some grocery stores carry two different kinds of sugar: cane sugar and beet sugar. Pure Cane Sugar, the kind C&H uses exclusively, is refined from sugarcane plants. The first cultivated sugar crop, sugarcane is grown above ground and nurtured in fresh tropical breezes under warm sunshine. Beet sugar, found in some store brands and in other makers that often don’t specify the source, is extracted from beets grown underground as a root crop.
