 Description Great Opportunity for a Sous Chef  position (posted May 24, 2013) in Vicksburg, Mississippi.  Gaming Hospitality Executive has been retained to assist  a company to identify a candidate with experience in supervising and coordinating activities of cooks and other culinary workers

Job description for the position of Sous Chef  is as follows... 

  • Responsible for supervising and coordinating the activities of food and beverage workers engaged in preparing and cooking food.
  • Responsible for day-to-day operation of  and developing new menus. 
  • Responsible for assuming responsibility for kitchen in absence of the Kitchen Manager.
  • Maximizes cost effectiveness within the assigned kitchen area by ensuring compliance with established budget, labor and revenue benchmarks.
  • Responsible for the accuracy of all time, attendance and variance records, as well as equitable scheduling of all shifts.
  • Ensures guest complaints and problems are resolved and requests for special services are carried out.
  • Responsible for preparing, seasoning, finishing, and garnishing all visible food used on the line, and preparation is in accordance with established recipes.
  • Performs as a Team Member with, Line Cooks, Dishwashers, Supervisors, Servers, Utility, and pertinent company Team Members in producing a smoothly and efficiently run operation on a scheduled shift
  • Upholds all sanitation and operational procedures as required by company
  • Maintains food costs and labor percentiles. 
  • Ensures that food quality is consistently maintained. 
  • Assists with scheduling, training, evaluating and counseling of  employees. 
  • Exhibits a friendly, helpful and courteous manner when dealing with customers and fellow employees.



















 RequirementsSous Chef  Requirements:

  • A high school diploma or GED is preferred.
  • Experience in a resort environment is highly preferred.
  • At least five years of experience as Sous, Pastry, or Specialty Chef is required.
  • Must be able to obtain Serv-Safe Certification. 
  • Knowledge of all applicable OSHA regulations and health code regulations.
